Thanks for all of the awesome help with the salad ideas! I wrote down a bunch of stuff I am going to get at the grocery store this week!
I'd like to work on some new dinners. I eat the same stuff all the time. And my cooking skills consist of basically the ability to put something in the oven (like fish or chicken) and sprinkle it with salt and pepper. Plus my son won't eat anything with any spice on it (at all, everything needs to be plain. I once made him shrimp in a butter sauce and I had the rinse the butter off for him to eat it.
It has to be healthy, and I try to stay away from a lot of red meat. What's in my rotation now is basically - salmon, tilapia or a veggie burger with quinoa and veggies are typically sweet potato, broccoli or squash. I'll usually make ww pasta with (frozen) meatballs and (jarred) sauce once a week. My son loves my mom's meatloaf so I am going to attempt that this week. It has to be fast and easy to prepare too and not expensive.
I love to make a quick/easy salad with quinoa and it can last for a few dinners or I take it for lunch for work.
I usually toss cooked (garlic flavored) quinoa with lemon juice and olive oil. then you can mix in whatever you want. I like grilled chicken for the protein, then add in chopped spinach, tomatoes, colored peppers, red onion, squash, carrots, etc (any kind of veggie). When the dish sits in the fridge overnight the flavors will meld together even more. It's simple and tasty!
I also look on Pinterest a lot for quick and easy recipes. I've been cooking with shrimp a lot. I made a dish with shrimp, avocado, corn, olive oil, lemon juice, and diced peppers. It was really good!

I second skinnytaste - sometimes I adjust the recipes to make them a little cleaner but a lot of them already are. One of my faves is the buffalo turkey burgers - OMG. I make a bunch and freeze them and take out to just throw on the grill. The skinny blue cheese recipe to top them with is great too.

This sounds great b/c I LOVE quinoa... do you good the veggies or raw? And then you serve it cold?
