When the girls start their new school, I have to begin packing lunches (and anything warm has to be sent in a thermos pre-heated), so following this thread for ideas! Here's my list so far:
-mac & cheese -soup, with most liquid drained off -bagel with cream cheese -tortilla with cream cheese and jelly -sunbutter sandwich (I got these premade uncrustable style dr. praeger ones) -hummus with pretzels to dip -chobani yogurt -veggie burger (for the baby, V doesn't like these currently) -turkey and cheese roll-ups
PB&J on whole wheat bread or whole wheat and flax pita Mac and cheese Left over chicken or salmon (from night before) with spinach and carrots Hummus and cheese quesadilla
She's still pretty fussy. Lots of yougurt and fruit Cereal and fruit Cheese sandwiches Cheese crackers and pepperoni Turkey cheese pita sandwiches Chicken nuggets Meatballs Mac and cheese Hamburgers
I make her take 3 bites of whatever I made for dinner too.
She loves lunchables. But just the meat and cheese. They're so processed, so I try to just do sliced cheese and ham roll ups. We eat a lot of fruit over here. And yogurt

Christian sometimes just doesn't want lunch so it can be a struggle.
Grilled cheese PB&J Chicken nuggets Turkey hotdogs Smoothies with tons of fruits and veggies. He's been on a smoothie kick lately and it's my chance to add veggies in. That's the only way he eats them. Yogurt Toast Pancakes or waffles Oatmeal Cereal Fruit and cheese
My kid pretty much eats nothing. He asks for the same lunch everyday: cheese stick, crackers, applesauce or apple slices, sometimes lunch meat, black olives, and cucumbers. My MIL can get him to eat PB&J or grilled cheese, but he won't usually eat that for me.
Half the time Logan just doesn't eat lunch. He'll typically only eat two decent meals, so if he eats a good breakfast then he's just not hungry for lunch, but when he does:

W's favorite lunch is deli meat, cheese stick, slice of bread or crackers, yogurt and various fruit. If we don't have deli meat, she usually requests PBandJ. I'm always on my own with her for lunch and it's really easier to,just,give her what I know she'll eat, even if it gets redundant. She eats a variety of foods for dinner, so that makes me not as worried about lunch

Zoe eats very little, in the way of variety. Luckily things she will eat are black beans and brown rice with shredded cheese, hard boiled eggs, bananas, and peanut butter sandwiches. That's basically her entire diet. She will occasionally eat chicken tortellini, but it's a toss up on if she's willing, even if she says she wants it.
PB&J, turkey and cucumber sandwiches, Mac and cheese, leftover dinner, yogurt with granola and fruit, black bean boca burgers, carrot sticks, Apple wth PB..
Breakfast: Any and all fruit. He will eat buckets and buckets of fruit all day long and be happy with just that. Waffles with cream cheese or PB yogurt Bagels Cereal bars Muffins Oatmeal with berries Scrambles eggs Bacon/sausage
Lunch: Pb&j Lunchmeat and cheese (either alone or in a sandwich) Carrots Nuts Broccoli Mac and cheese Nuggets Soup Grilled chicken
Dinner: Usually some variation of lunch When I cook it's a meat, veg, starch.

Im the same as you, lots of toddler food. We were eating a lot of variety before ruby came along. Violet is a great eater but Ruby sucks.
My dinners for them are: Grilled cheese and soup (at least once a week) Quesadilla (bean and cheese) with guacamole Ham and cheese croissants Ravioli Mac and cheese with veg mixed in Chicken nuggets or fish sticks and dr Praegers spinach and broccoli nuggets

They eat cereal and pouches for breakfast. School lunches are always: Turkey & pepperoni sandwich of sunflower butter sandwich Steamed vegetable Coconut based vanilla yogurt H takes a zbar, d gets snacks at school.
When I'm home with D she wants snacks all the time..
Their favorite dinners are *make our own no cheese pizzas *meatballs *burgers *pork chops, roasted sweet potatoes, broccoli *rotisserie chicken *deconstructed Mexican feasts
We've are in a repetitive weekend lunch rut Nuggets, mini chicken sandwiches, fruit Sometimes bean quesadillas.
Oh, and they eat a pancake breakfast every Friday night. Occasionally eggs..

My kids are raw veggie fanatics, so we always do them as a side: peppers, cucumbers, carrots, cherry tomato, broccoli, cauliflower. They'll eat peas as a side too. We do strawberries, pineapple, grapes, Apple slices, bananas, blueberries, blackberries.
We do cheese and crackers, turkey, ham, almond butter/peanut butter and jelly, chicken nuggets. Wrap sandwiches with deli meat, hummus, cheese, spinach. Veggie burgers and sweet potato fries. Grilled cheese and chicken soup (Carter just eats the sandwich, lol) Those spinach potato tots They love pierogies Quesadillas (they will only eat this if my friend makes them lol) Fried rice with veggies

Pigs in a blanket Grilled cheese Anything with pasta and red sauce Beans and rice Soft tacos Ham or pepperoni with pita French bread pizza Mini meatballs or Aidells SBJs Burgers
We sometimes do fun presentations, like using a cookie cutter, serving the meatballs cut in disc shapes or making our burgers into sliders.
I feel very lucky at this point that daycare takes care of lunch. Supposedly he eats well there. They have just started doing "family style" lunch there.
But for dinners, I feel the same way. His main go-to is Morning star chicken nuggets, baby carrots and applesauce (and it has to be from the pouch, poured into the compartment of his plate.

I usually send leftovers for lunch at daycare because they will heat things up. If there are no leftovers they get a vegemite sandwich and a piece of fruit. They seem to eat pretty well at daycare so I always add extra veggies. When we are at home it's really hit or miss. They usually just graze on things, fruit, raisins, nuts, bread, cheese, cereal, musli bars etc. For some reason they have both been loving frozen peas and corn, in a bowl, still frozen. I don't know.
Breakfast: Cereal Cereal bars Applesauce pouches Apples, strawberries, or blueberries Squeeze yogurt (he won't eat yogurt in any other form)
Lunch: he eats at school during the week and they tell me he eats everything.
Snacks: popcorn, honey wheat pretzels, carrots and hummus, graham crackers by the truckload, cut up fruit.
Dinner: the biggest fight Mac and cheese Salmon Roasted chicken Vegetable soup Salami, crackers and sliced cucumbers Those are the things he's guaranteed to eat.
