I clicked over here accidentally, but as someone who had GD twice, I'm heavily questioning your supposed diagnosis. Your GTT numbers were within range and a single borderline fasting glucose number is pretty meaningless. I only bring this up because it seems like an extra level of torture, and unnecessary, to make you eat according to a typical GD plan when you have HG.
Also, stress and sickness itself (such as HG), can raise blood glucose levels. It's something you might want to ask them about. Good luck with everything.

Totally second this. You PASSED. That's why there's a RANGE. I get why they want to be cautious and I don't think their plan is too unreasonable, the checking for a week or so, but I also think you are totally justified in standing ground and refusing the diagnosis. I'm glad you insisted on the one-on-one!
I'm so sorry. ((hugs)) I dealt with that last pregnancy and it is truly awful. People try to be helpful but don't know how frustrating it is. I can't tell you how many times someone suggested ginger or some other idiotic comment. I guarantee after 29 weeks of throwing up, I've tried ginger.
spunbutterfly, this is all a bunch of bullshitake. I would be throwing something at this point. Hopefully, the one on one will help open their eyeballs. I know this pregnancy has been tough on you and I could not imagine still throwing up plus you lost so much weight, and the fact you can even keep something down is amazing... these guys are literally baffling me in their reasoning.
Are you happy with the care you get from your midwives otherwise? Because I would be mad enough to switch practices if they insisted on the GD diagnosis with those results.
I had a very similar test result last time (failed the fasting # by a few points) and all the rest were within the numbers. They had me see a dietitian and control through diet (which, I admit was a good thing and helped with weight management) but you clearly don't need that with HD. My new OB asked about how I did on the test last time and was confused with my results and the diagnosis and said that was not a correct GD diagnosis.
Sorry they are putting you through this. Eat what you can.
The only thing that helps my fasting numbers are a 20 minute walk after dinner, and eating right before bed...my fasting numbers are always the high ones, everything else is always fine. If you're able to stomach it you may want to try eating just before bed to see if you can get your fasting numbers down. Also, another thing I just realized is that sleep really really affects my numbers, when I don't get enough my fasting numbers also end up quite high.
