if it were your birthday I'd say go with the super fancy place. But your anniversary is a joint celebration, so I think you should choose someplace that your H will enjoy.
My husband would hate this. He hates fru fru and he's a picky eater. I would love this, but I wouldn't want to pay $300 and listen to him bitch all night. If your husband would be a good sport and go along with it because you want to do it, then do it.
I think you should go somewhere you'd both enjoy. Honestly I'd never go to that place and I consider my self a high functioning picky eater who can usually eat anywhere. There was really nothing I would eat there with any enjoyment.

Love that term! There are a lot of nice/fun/ interesting places that I've tried and would love to try, but this menu doesn't interest me.
We are not fancy food people so this would be a total waste. I agree with a PP that it's a joint celebration, so I'd go with a place you would both enjoy.
We are going to Banff for our tenth anniversary in October too! We actually nixed that place. if I'm being honest, I'm a food asshole and I think it looks like it's trying too hard and just won't be very good. So good choice in canceling.
I think we are going to do the steakhouse at the Fairmont. Check that place out. It looks quite nice.

I think the $150/pp price tag is not bad for a 10th year anniversary place. But I'd leave hungry from that place personally, so I'm glad you decided to cancel.
If your H won't enjoy, pick something else. The celebration is about both of you and just should both enjoy it and $300 is a lot to spend on a meal that won't be enjoyed.
Although, I'd also consider budgeting for (maybe as your ann gift from H?) a dinner out with a girlfriend or two. Again, this is simply if you have the specific desire, & because I can definitely relate. My H is much more of a steakhouse guy, so I have two groups with whom I try new restaurants once or twice a month. It works great!
I think you should go with a friend (or even alone!) for your birthday. If you've never been to a place like that, but always wanted to, you shouldn't have to always bend to the joys of the steakhouse.
My husband would have vetoed this place already. There's practically nothing he would eat there. I'd go with steakhouse if you think it will end better
