What to do with chocolate mint?

We have a huge crop of chocolate mint this year. I have made smoothies and brownies; but I am getting sick of both. Can you suggest any other vegetarian recipes for mint?

We also have a ton of chocolate mint. That stuff is super invasive! Its long roots snake all over my garden. I have actually never made anything with it, only used it as a garnish on fruit salads. I just think it is pretty and smells nice .
