I don't think I've ever really seen grapefruit soda except for baby la croix or some other sparkling water. I voted for juice and club soda. I love Palomas and never think the make them at home!! yum
When I worked in a restaurant, we made them with San Pellegrino Pompelo. I've seen it made with that in some higher end bars. I think it generally gets made with juice and soda though.
I think it tastes best with grapefruit juice and club soda, but I don't tend to like sweet drinks all that much. The first paloma I ever had was made with fresca.

I know you all want to know where I stand. In Mexico, a Paloma is always made with grapefruit soda, usually Jarritos. Here in the U.S. it seems there's a trend of fancying it up with real grapefruit juice and club soda, and serving it as a brunch drink.
I am quite partial to the grapefruit soda version. It feels more authentic to me, and it's slightly easier to make. If you look up the recipe in Spanish, they're all made with grapefruit soda.
