Yum I love squash and sweet potatoes. I'm trying to get sold on artichokes. Last night I made a whole chicken in the slow cooker - healthy and oh so easy!

I love butternut squash too, in fact I have a few popping up in my garden right now, yay!! You should tried butternut squash fries, you slice them like fries and roast them, similar to sweet potato fries, then I dip them in BBQ sauce.
What about beets? I love roasted beets with balsamic, goat cheese and arugula.

I also love artichokes. I made a lemon spaghetti with artichokes, asparagus, red onion and cherry tomatoes the other night that was amazing. I love love love roasted asparagus with just a little olive oil, salt and pepper. I actually like overcooking it because to me it tastes like roasted pumpkin seeds.

I love all sorts of roasted veggies or grilled veggies. Acorn squash with a little evoo and some rosemary rub on the grill is divine...so is eggplant on the grill or roasted. I love sweet white vidalia onions on the grill and I'll just do veggie kabobs in the summertime. MMMM i really want some veggies now!!
I love to make slow cooker steel cut oats. I put all kinds of things with them. I do one version that tastes kind of like carrot cake. Shredded carrots, vanilla, and cinnamon, and then plenty of milk and water. Turn it on low for about seven hours. Make sure you spray the inside of the slow cooker with non-stick spray beforehand. Then when the oats are done I have enough for the week. I mix in a little Greek yogurt and that's a filling breakfast!
I also have been making a breakfast cookie. 1/4 cup old-fashioned rolled oats, 1/4 scoop vanilla protein powder, 1 heaping tbsp almond or peanut butter. Then mix together until combined, mix in about 1/8 cup non-fat milk. Then add in whatever you want. I use overripe banana, slivered almonds, and craisins. But you can really use whatever you want. Then when it's all incorporated spread out onto a plate and refrigerate overnight.
For snacks I like celery with pb or apples with pb or almond butter, hardboiled eggs, string cheese, or bananas.
An easy go-to food is a microwaved sweet potato.

I usually cut it in half because one serving has over 400 calories. I try not to eat that much for breakfast because I'm hungry in a few hours...so I might have half for breakfast and the other half for a snack.

It's fantastic! You can do it with all different fruits too, or even peanut butter.
I hate to say it, but I hardly ever measure. Maybe 3/4 of a cup of steel cut oats and 2 cups of milk and 1 cup of water? Basically a lot of liquid to a little oats because the oats will soak it all up overnight.

I made it for BF and I and he is extremely picky about veggies. I had a lot of spaghetti leftover so I decided to spruce it up and it turned out so good. I roasted the asparagus first with the olive oil salt and pepper, roasted at 400 degrees for maybe 15 minutes (but I like mine overcooked). I then sauteed the roasted asparagus with some red onion, marinated artichoke hearts, and some halve cherry tomatoes in a little bit of olive oil and lemon juice. Then I added the lemon spaghetti right in the pan with it, just for a few minutes to get hot. Sprinkle with some parmesan cheese and voila, totally easy and delicious. Highly recommend.
