We have people over every year around Christmas for a cocktail party. Luckily, my mother is coming this year so she can help me prep because I am tired. Smaller group this year, probably around 30people. I have one GF person I'm having trouble with. Usually we have vegans but they're busy this year... but I found they're easier to cook for than the GF.
Shrimp cocktail Crab stuffed mushrooms Spinach artichoke dip Buffalo chicken dip Beer cheese dip (I have one of those 3 crock dip things) Bourbon meatballs Meat/cheese/smoked salmon plate Bacon wrapped water chestnuts Baked brie Polenta squares with a tomato/olive tapenade Korean Mandu dumplings (I found this in a book my mom put together so I'm making her make them) Veggies and dip A pork/onion marmalade crostini Some sort of chicken skewer
And I'm also going to grab a few things from Trader Joe's I can just pop in the oven.
I'll make Christmas cookies. I don't really do a lot of desserts because I'm a shit baker.

I would love eating this! How fancy do you expect your party to be? If you expect it to be a little fancier, I'd think a little more about themes. Do you want mostly Italian foods? Mediterranean? Korean? Right now, you're a bit all over the place, but, if the theme is "come eat some yummy shit and drink a lot of alcohol" (as is often the theme of my parties) your friends will have a blast!
When people ask what they can bring, assign dessert. Usually the people who ask are pretty good bakers, in my experience.

Haha yes usually my theme is come eat until your face falls off and drink way too much. The amount of wine we go through every year is insane. Although I'm obviously not drinking this year, which means that's about 2 less bottles of wine that we'll need.
I would grab GF crackers and GF peppermint joe-joes from TJs. THen set aside small containers of the dips to keep them GF and safe? It looks like you have plenty for the GF person to eat but they might be worried about cross contamination?
This looks fabulous. For your GF friend, maybe set aside a package of rice crackers or something for them, rather than putting them out with the rest of the stuff (so you don't run out). Then just give them a heads-up about the dips and other foods that they can eat. Desserts are easy either to buy (meringue cookies, good chocolate, peppermint bark, whatever) or delegate a friend or two to bring - you are going all out as a hostess so no good friend would mind!

I would not try to cook for someone with celiac disease, honestly. I would purchase 2 or maybe 3 pre-made items from a store and a dessert or 2 and let that person know. If the person has cd the danger of cross contamination is too high. My answer is different if the person does not have celiac but is instead on the "gluten bad" train.

I think it makes her very sick. I'll definitely pick something up at TJs. I don't want to screw her stomach up.

I'm not GF but I happen to make food that is. These are two of my party favorites :-)
These quinoa cheese sticks are easy and delicious. You can toast the quinoa the night before, leave it in the fridge and then make it right before the party. You might want to make a double batch, because these go quick at my parties, it does not matter that they are GF!
This menu looks yummy! I agree on not trying to cook for your GF friends. Mine all can't have any cross contamination with pans and utensils used (like if they have ever had gluten in them) and would not trust food at a party. Pre-packaged foods for them for sure.
I have Celiac and I think I'd probably only feel comfortable eating 2-3 things on that list. Definitely grab a few pre-packaged foods. Not sure about your friend, but I usually go to these sorts of things either not hungry (because I ate in preparation) or prepared to eat a lot of cheese, veggies and chips.
