My SIL is throwing my other SIL a baby shower. It's at 2:00 and she listed "light refreshments will be served" on the invite. She asked for my help with the menu. How does this sound? Any recommendations?
Veggie Platter Fruit tray Hummus and pita Caprese kabobs Cheese and crackers Animal crackers and dip (it's an animal themed shower) Cupcakes or cake Cookies Coffee Seltzer Soda Tea

I think your menu looks good, but you could drop the caprese skewers and still be fine. Light refreshments at a shower or similar event near me always means mints, nuts, cake, and punch. Always. If I were a guest I would be excited to see real snacks!
Couple thoughts: - you could drop cookies as a third dessert as you already have animal cookies and cupcakes - another easy, lighter item is falafel. You could just skewer it and serve it that way. It pairs well with the hummus also.

Artichoke dip:
1 cup mayonnaise 1 cup grated parmesan cheese (with some romano, optional) 2 cans (drained) artichoke hearts in water 5 cloves garlic, crushed Dash of lemon juice
Put in blender. Bake for 15 minutes at 350 before serving. Paprika on top.
Serve with thin sliced French bread.
*I usually bake it a bit longer.
I don't even really like artichokes but this is really good.

Costco always has one in the fridge section that I just throw into a crockpot.
I would be tempted to add a tray of tea sandwich. Nothing hard or fancy, just something delicate like egg salad on white bread cut in triangles, or cucumber cream cheese, etc.
