I'm so sorry you are going through this. Please keep us updated. Have you notified the police about him so that they are aware of his mental health situation and are aware that he is not a threat, but someone who needs help?
Not yet. I did mention him when I initially called them this morning. I'm going to call them back to see if I can file a missing person report now instead of waiting until this afternoon.

I am so, so, so sorry:( I would not file anything more with the state/police about your car, especially if the driver is mentally ill.
I understand why it is done and the good reasoning for it; as they find the car, they find the person, but it can get out of control quickly resulting in additional criminal charges and even worse..The police will read just the car was stolen and everything after that stop will be related to the "theft" of that car.
If he is having an episode and the cops sees the car, turns around, tries to pull him over, he refuse; it would get bad.
I have seen these issues too much. At minimum he can and will be charged with theft.
I hope you find him soon!MH is so fucking horrible.
Currently it's just as "failure to return". It will stay that way until next Wednesday unless I notify them differently. My concern was if he got into an accident there might be a record of my truck's license plate.

I would be more worried about the cops trying to stop him or getting involve with anything less than "he is missing." Even failure to return is a summary offense and may allow the cops to stop while he is driving in the car.
I say this from 10 years of legal aid and mental health. Too many case start out this way- MH person is missing, car is missing, filing report about missing car for the SOLE purposes of finding their child. Cop sees car, tries to pull over, and shit can hit the fan.
I only say this with love and having many clients shot and killed by the police for a misunderstanding of their MH condition. I hope that doesn't upset you
But, you are on top of it and he must be someone. Did you track the Gps?
I don't know if his phone is trackable. I know he has an iPhone, but don't you have to have it set up on your phone in order to be tracked?
If he has Find My iPhone installed, but you would need his iTunes password. You MIGHT get some help from his carrier; I'm not positive, but it could be worth a call.

This is what I was trying to get at with my post. Communicate with the police and have them be your allies in this. They hopefully are trained in dealing with situations like this where the person that is missing is dealing with a mental health issue. Explain fully that the goal is to bring home your son safe and not necessarily to find your vehicle.
I'm not sure if you have a NAMI chapter near you, but they are a great resource for you and your son. Hugs.

I hope your son is found safe and sound. I doubly hope he has checked himself in somewhere for help, but in any event I hope he's in touch soon. (((hugs)))
