DD's First Communion is at 10:30 am at the end of the month. People will be back to our house right after mass and obviously we'll be out of the house until the party, so EASY or make-ahead is a big plus. We'll have about 28 people. Mostly adults, but a couple other little kids besides my four.
I wanted to serve more of a "brunch" type menu than a lunch. For drinks, bloody mary bar, maybe mimosas, coffee, juice, wine.
I started with a breakfast-y plan, then considered doing a re-run of an Easter-type dinner, and now am hot on a mix of the two.
I am thinking of making a ham, and an egg bake, a springy green salad, fruit plate or fruit salad, rolls, muffins?, probably some kind of potato thing. WE could put the ham in first thing in the morning, have the neighbor add the eggs to the oven later, and I could have the other things all ready. We'll also have a sheet cake so I don't need much sweet stuff.
What do you think? Any suggestions for a potato dish beyond the usual cheesy potato casserole? A potato salad of some sort? But I don't like standard deli potato salads at all. Or...whatever else you think might work.

I'd do a potato hash brown dish in your crock pot so it's warm when you return from mass. I usually do 3-4 types of muffin/quick breads (to die for blueberry muffins are a great base and I double the batter and do cranberries and orange zest as a substitute for variety without extra mess). Costco has a great shredded kale and broccoli sale that's always a hit here and again, super easy.
I get that Costco salad, too. I get it so much that I don't think I can get away with serving it, but a pre-made salad is a great idea also. I will see what other "flavors' they have and if anything else might work.

The Asian salad is really good too! ETA: sometimes I like knowing someone always brings the same thing. I know it's good and I look forward to it.

I would think ham and muffins, salad and fruit is great! I would skip the egg thing because I would want it to. E super easy. Like the idea of a hash brown crock pot side mmmm.
My shower was a brunch and we did mini quiches (in those frozen tart shells - made them ahead and just warmed up a bit), hash brown casserole, and breakfast pastries like croissants and banana bread. Oh, and cake - of course. For more people/a baptism I think if we'd added some sliced ham and maybe a salad we could have called it good.

We had brunch for Easter. I did the following: - fruit - spring salad w/ strawberries & walnuts - blueberry muffins - egg & potato bake - French toast bake - spiral ham - jello pretzel salad
Update: as this gets closer I keep paring back, LOL. I'm down to ham, fruit, salad, rolls and cheesy potatoes. I'm nixing the bloody Marys b/c too much fuss and mess and people spilling tomato juice. I'm having juice with champagne if they want to add it and maybe vodka...not sure (screwdrivers). Wine with dinner. Coffee.
May still add a hot veggie or mac & cheese (per DD's request) but maybe not. I am down to not really caring and wanting it to be easy! Just kind of funny how it starts out with this elaborate vision and...changes.
