I pick up a kale/avocado/almond milk smoothie from the gym. Even on days I don't work out, I still go and get that for lunch. It sounds gross but it's not bad at all. I used to do a second Starbuck's run in the afternoon but after switching to this, it's not necessary. It gives me so much energy.
I have a bento box and I like to do a combination of cheese, protein, veggie with hummus, pickles/olives, HB egg, nuts etc.
Whenever I make soup or chili I freeze a bunch of individual containers for lunches.
Salads of different variety, or else I get sick of them -taco salad with leftover taco meat or fajita chicken -chicken with goat or bleu cheese crumbles, nuts, dried cranberries and balsamic -Cobb salad (chicken, avocado, bacon, hb egg, tomato, cheese)

I've been on a spinach salad kick. Lots of greens with carrots, red pepper, broccoli, edamame, frozen peas and unsalted sesame seeds. 2 hard boiled eggs and it's enough to fill me up for about 30 minutes!! I need more protein I think?? Also eat leftovers when we have them.

I've been grilling portobellos and cutting into strips to add to wraps. Throw in some roasted red peppers, tzatziki, feta, spinach and red onion - fantastic!
Ground turkey with taco seasoning, sauteed veggies (onion, peppers, mushrooms, brussel sprouts, spinach, really anything) and quinoa. So good and filling too.
Spaghetti squash with either ground turkey or shrimp, sauteed veggies and pasta sauce.
It's easy to make a big batch of these on the weekends and then portion it out for the week.

I do a lot of veggie or turkey chili - cook a big portion in the crock pot over the weekend and then eat it throughout the week.
I also just made some veggie quesadillas. I put in a TON of black beans for protein, plus some shredded cheddar. You can use any veggies you like, really.
Basically, anything that I can make in advance so I don't have to do much prep work at night is what I eat.
When I'm home, I like to take a bag of shredded cabbage - I throw some coconut oil, garlic, some chili paste, a little sesame oil, rice vinegar, and some soy sauce into the wok. Let it all warm up a bit, then toss in the bag of cabbage until it's coated and just starting to turn translucent.
I do smoothies a lot, too, esp. in the summer - so easy and filling.
