Sorry to rehash this. It is going to be a 3 hour drive for me if my dad wants to go because he cannot drive (Altzheimers). So I can't really keep food warm that long. Need cold food ideas. I am technically hosting but it is a pot luck. I do not intend to provide food for everyone but a beefed up pot luck (like what I would normally take for pot luck (double my family) times 2 or 3. It is at a state park. There is a grill but no electricity. Help?
I like bringing tortellini salad, because it can kind of be a main dish or a side dish. Super easy to make a big batch too. Tortellinis, pepperonis, fresh mozzarella cheese, coated in caesar dressing.
I'd worry about cold food too with travel. I would crock pot something using a car adapter. I like queso. Anything that's cans thrown together! Or hit up a store near the state park and pick up something like fruit.
Bring desserts or a ton of chips and store-bought dips. Or veggie platter. Or fruit platter. Or pasta salad. Or team up with someone. They bring cold cuts, you bring bread and cheese, and someone else brings the condiments for sandwiches.
3. Orzo salad - orzo, different color chopped peppers, chopped cucumber, black olives and chopped red onion if you like them, olive oil and red wine vinegar, feta cheese. You could also add chick peas, chicken, or substitute quinoa for the orzo.
4. Less healthy but delicious: brown hamburger, add taco seasoning. Add to salad with shredded lettuce, chopped zucchini, olives, shredded cheddar cheese, crushed Nacho Cheese Doritos, and Kraft Catalina dressing. So good... so bad for you...
Variations - I've made it using grilled, boiled and even frozen corn. I sub balsamic vinegar for the sherry, when I have it. I also use pearl mozzarella and the smallest cherry tomatoes I can find so I don't have to prep those.
Theme (or at least color scheme) for a Labor Day reunion? Need to buy plates, cups, napkins, plasticware, and also photo booth props which are sometimes themed. DH says positively no to any kind of luau because he hates that stuff.
We always put up red, white and blue for Labor Day. No idea why, except it was my grandfather's preference, and he literally fought for the right to unionize, so we figured he had the right to pick, lol.
Red popped into my head as well. I guess because it is somewhat patriotic, and it is a national holiday. And blue is my favorite color so it would be my second choice.
