I think we ate ours shortly after our first anniversary. I was really appreciative that my MIL had researched how to do it because it really tasted just as good as when we had it at our wedding.
On a sad note, our cake was the last that our baker made. He died just a couple of days after our wedding. We didn't even get the chance to pay him since he had never deposited the check. Our parents sent a message on our honeymoon that he had passed away. We contacted his family and made sure to make a donation to the charity that had been designated in his honor. He was the niiiicccest guy. A retired teacher that did the cake thing on the side out of his home.

i ate that shit at 3am the night of our wedding in the room- i couldn't sleep, was hungry, and there it was... no forks, so i used a plastic champagne glass that was in the room to scoop it up and eat it, lol. My husband woke up seeing me in bed eating that way and just laughed and went back to sleep

We happened to be with all the couples who were in our wedding for a dinner about a month before our one year anniversary so we broke it out then and served it, along with another dessert. It wasn't awful or great, but it was kind of fun to have it with the same crew who was in our wedding - especially since DH doesn't eat sweets. I would have been eating it alone on our anniversary.
We did not save our top. We ate it during our mini moon. Our baker offers a "deal". First year, a replica of the top of our cake is free with a pro picture of the cake (so they can use it for their files). Years 2-to whenever, the cake is 1/2 off. It is the highlight of our anniversary.... ;D

We had a few bites of it during our first month's, and I apparently did not close well enough afterwards that it was freezer-burned when we opened it again for our first year.

We didn't. There had been too many hurricanes lately, and every time people lost power for more than a day, they lost their cake too. So it seemed kind of pointless.

We saved the cake but ate it about a month later. We bought a small cake from our baker on our 1-year that looked like our top tier. I wish we had done that for our 2-year. God that was some awesome cake!
Someone was kind enough to box up the top of the cake and store it for us, but apparently they didn't do it right and when we went to eat the cake it tasted horrible! Yuck! H went to a grocery store and bought me a small cake.
My mom had the foresight to save off half of it for us, and when we got home the next day I did wrap it up and freeze it. But we ate it after we came back from our honeymoon, because we were moving and there was no way I was moving part of a frozen cake.

The cake was delicious at the wedding, but I never thought the idea of old frozen cake sounded good. Everyone else insisted on saving it so we did. Then after a year I'd developed food allergies and didn't have the choice anyway so we didn't eat it. I think it's still in my dad's freezer... or maybe someone else ate it - who knows!

Yes! Our baker gives us a free mini-cake on our first anniversary, but we also had a bite of the defrosted frozen cake. The defrosted cake was better than the fresh one!

We didn't. Our bottom layer was red velvet, so we get a red velvet cupcake to share every year from a different bakery. I definitely look forward to it every year.
We decided not to save it because I'm not a huge cake person and if I'm going to eat it it has to be fresh.
I bought cupcakes for our anniversary last night. Carrot cake for DH (his fave - I actually bought him a small carrot cake for the reception as a surprise) and some sort of chocolate for me.

It's in our freezer.
Our cake had 4 layers: The botton was chocolate chip, middle 2 were pumpkin poundcake, and the top was almond pound. We never got to eat any of the cake at the wedding besides what we fed to each other during the cutting.
When we ordered the cake the pumpkin pound wasn't available so we ordered it without tasting. We've still never had it. :-(
Everyone said it was delicious. I'm still bitter we never got to eat any of our wedding cake. I wanted to eat the top layer the next day, but H wanted to save it.
I'm ordering smaller cakes in the other 2 flavors for our anniversary and planning on gorging myself on cake.
