I love packing! I'm super type A and I like to make long lists and spend a few hours getting everything organized a few days before we leave. Although now that we have kids it's a lot more work because obviously my H still only packs for his damn self lol.
We went to Mexico in April and I started packing like 2 weeks before because the twins weren't wearing warm weather stuff at the time. But we're going on vacation next week and it's stressing me out that I can't really pack until the day before, because they're wearing everything that we're taking right now lol. But at least I won't have to bring as much since we're staying with my FIL so we'll have access to a washer & dryer.
I unpack as soon as we get in the door and it drives my H crazy. The suitcases get dumped on the floor in front of the laundry closet so that I can sort stuff out right away lol.

Yeah, I'm in the "love packing, hate unpacking" camp. We're going out of the country next week with two kids but don't know exactly when, and I'm all, "Just give me 12 hours notice - no sweat!" I can pack all of us (well, me and the two kids) for two weeks away in under two hours if I'm uninterrupted, but I know that won't happen unless I get a sitter, ha.
ETA to speak to the OP, I keep a toiletry bag packed for all three of us (including any possible meds that might be needed and mini first aid kits) and my and the toddler's clothing are all neutral bottoms, color tops, so that's quick, too. I have a super basic list as far as tops, bottoms, underwear, swim, etc. Honestly, making the menu because we have to grocery shop for the full two weeks at once (we go to the middle of nowhere) takes the longest, but I keep previous years handy so I can just select the correct number of days we'll be gone and have my menu and shopping list done and done. Packing cubes also help.
I like packing, but I’m a control freak, and it is a little bit stressful.
I’ve always considered myself a champion packer, and really resisted packing cubes for a long time because I thought I packed pretty damn well by myself thank you very much. But I love packing cubes now, mostly because I like how organized it makes me on the trip — I can actually find stuff, and I don’t ruin the whole packing scheme by removing one item.

I usually pull my suitcase out about a week before and start tossing things into it as I remember I need it. The night before or morning of, I’ll sit and organize everything and add the last minute stuff.
We’re going out of the country for a month in a couple of weeks, and I have a whole room dedicated to trip stuff.
Unpacking is easy. Just throw all that shit on the floor and sort for laundry. Unless you are an over packer and you come back with a ton of clean stuff. Lol.
I wash it anyway because I’m lazy. Bags go right to the washing machine so I even skip the step putting it all of the floor 😂
I drag my feet doing it so it takes eleven billionty times longer than necessary. My neighbor can get her whole family packed for a weeks vacation in an hour. I don't even know how its possible.
She lies.
I can do it. It's usually the hour AFTER we were supposed to leave and it's not a pretty scene.

I travel a lot for work, so I'm a packing pro. I can pack in 30 minutes, if I have no interruptions, 60 if my H is being annoying and in my way. I also unpack as soon as I get home. But that's more of a space issue - we live in a small place, and I don't want to have to step around my suitcase for weeks on end.
My H on the other hand, makes a million lists, lays his shit out every where, takes 3x what he needs, then bitches b/c he doesn't have room for everything in his super extra large heavy awkward suitcase and wants to know why I won't carry/wheel his suitcase for him.
