Am I the only one who gets excited about cooking again after Thanksgiving? All my friends and family think I’m nuts.
Monday- Chicken stew in the crockpot. New recipe I’m really excited about! Tuesday- Greek Chicken in crockpot for pitas. Another new recipe I’m excited about. Wednesday- I’m out of town. Thursday- Spaghetti Friday- Pizza delivery
I get excited to cook things after thanksgiving that aren't so prescriptive. Ie like you must eat turkey..... Monday - Chicken and veggie curry in crockpot with rice Tuesday - hoping that there is enough leftover of Monday Wednesday - Freezer meal or frozen chicken pot pies Thursday - DH is out of town, may invite my parents over for ravioli that night Friday - Crockpot shepherd's pie...need to find a recipe for this, but I got a ton of potatoes from Costco yesterday
I didn't cook or get leftovers from Thanksgiving so need some inspiration this week as I did pork dishes all weekend Today: breakfast: DD French toast, me quiche after practice Tues: Salmon, couscous, asparagus Wed: beef stew in the crock pot Thurs: lemon chicken, quinoa, roasted veggies Fri: Brisket in the crock pot or stuff peppers whichever sounds better mid week to take out and thaw
Sunday - Garlic chicken thighs with roasted potatoes and brussel sprouts Monday - Leftovers Tuesday - Quick take out or sandwich at home after my lawyer meeting Wednesday - Tacos Thursday - Buffalo chicken sandwiches (plain chicken for the kids) Friday - Leftovers Saturday - Out with friends
phdmomma, I buy the peppers then, blanch them and then fill them with uncooked good hamburger, minute rice, and tomato soup then freeze all mixed together. Once thawed, I throw them in the crock pot all day with a quart of my homemade tomato juice. DD will eat a jumbo stuff pepper and this is the kid who hates eating meat. I tend to buy peppers from the local farm in October and do a few large batches for the winter months.
Sunday - turkey vegetable soup Monday - more soup and roasted salad Tuesday - bbq chicken, broccoli, spinach salad Wednesday - bbq chicken quesadillas Thursday - country ham, eggs, fruit Friday - out at city Christmas tree lighting (I will probably eat with the kids and DH will meet us there and he can do whatever...)

Not a very healthy week, but I feel like comfort food.
