We use Soy Sauce or Aminos (not tamari), regular butter if we don't have ghee, regular ketchup. The boneless thighs are so juicy and tender. We serve it over rice, or cauli rice and add in peas or broccoli.
Instant Pot Black Bean Soup 1lb dried black beans (soaked) 5 cups chicken broth 1 medium onion chopped 3 stalks celery chopped 4 cloves garlic minced 4 medium carrots chopped 1 Jalapeno pepper seeded and chopped 1 pint grape tomatoes quartered 2T tomato paste 1 – 16oz can chopped tomatoes 2T extra virgin olive oil 2T ground cumin 1T kosher salt 1T ground coriander 2tsp fresh ground black pepper
Optional: Chopped Green Onions, Sour Cream, Guacamole for Garnish.
To soak beans in Instant Pot, add 1lb black beans and enough water to cover by 1in plus 1T salt. Place set and set to Manual for 8 minutes, allow to natural release.
While beans are soaking, chop tomatoes, onion, carrots, Jalapeno, and celery and mince garlic.
After beans have completed natural release, drain and rinse in colander. Once rinsed, place one half of the beans in a separate bowl and mash.
Set the Instant Pot to Saute and adjust to High. Add extra virgin olive oil, carrots, celery, Jalapeno, and onions, and cook for 2-3 minutes stirring often. Add garlic, salt, cumin, pepper, and coriander and cook for 1 minute stirring often. Then add quartered grape tomatoes and cook for 1 additional minute.
Add broth and canned tomatoes and bring to a simmer. Once simmering, add mashed beans, whole beans, and tomato paste, and stir to combine.
Place lid and set Instant Pot to 30 minutes on Manual – High. When done cooking, allow to Natural Release.
Serve and top with Garnish of your choice.
Makes approximately 8 – 2 cup servings
ETA This makes a TON of soup, so if you don't want leftovers to freeze, I recommend halving the recipe.

We have this almost once a week. So easy and makes lots of leftovers for the 2 of us. I make some rice and add it in at the end right before serving in order to make it more filling. I also use fire roasted tomatoes.
