Our landscaper only used one brand of stone, I think it was Eagle something. They had various types, but our quote covered over 50% of what they had on their display.
We received an invoice that detailed all of the work and parts. So it said what style stone, what pattern, the lights, the fire pit kit, etc.
Of the 2 companies we talked to, 1 gave us a basic rendering, but not enough to take it and go somewhere else.

So did they just kind of talk you through how it would be laid out and you had to proceed on faith?
They had a small setup of options at the store so we could get an idea. Nothing full scale, but enough to see paver options and colors. And they had a few different layouts put down.
We had a very large brick and flagstone patio put in a few years ago. We had to pay a deposit for a rendering. I remember this because I hated what the first company came up with. The design was terrible and also out of my budget, so it's was basically $250 wasted. I can't remember what the second company charged for the design, but it was very detailed and they were the ones who did the installation.
Not sure if this is typical because mine was a big project (I think it cost about $60k+ total) with plants, lighting, drainage, steps, walkways, etc.
I would expect to pay a modest cost ($200-500) for plans. If you can pick out the material you’d like you can get a better range, but every landscaper I’ve worked with has required a payment for plans/rendering.
