Thought I'd post this as it was super yummy and well received in my house. nothing like one bird 2 meals (smile)
Chicken Rotisserie Enchiladas
Ingredients: 2 cups shredded rotisserie chicken 16 oz. of your favorite enchilada sauce 3 cups colby jack shredded cheese 8-10 corn tortillas 1 can black beans, drained and rinsed Directions: Preheat the oven to 375 degrees. Place a few spoonfuls of enchilada sauce in the bottom of a glass baking dish. Place a layer of tortillas in the bottom of the dish, overlapping to cover the entire surface. Layer with ½ of the chicken, ½ beans, and ⅓ cheese, ¼ sauce and then another layer of tortillas. Repeat with another layer and cover the top with remaining sauce and cheese. Cover the baking dish with non-stick aluminum foil and bake covered for 20-30 minutes or until bubbly. Remove the foil in the last 5 minutes to lightly brown. Allow the enchiladas to rest for 10 minutes before cutting. Top with chopped cilantro, scallions, and a dollop of sour cream, if you wish.
Easy Chicken Salad
Ingredients: 2 cups shredded rotisserie chicken ½ cup mayonnaise 1 tablespoon mustard 1 stalk celery chopped 1 teaspoon onion powder 1 teaspoon salt ½ teaspoon pepper ½ teaspoon dill Directions: Mix all ingredients in a bowl and serve on crackers (we love it with pickled onions and everything bagel seasoning), sandwich bread, rolls, on a salad, or in a tomato cup.

Sunday - Dover sole, couscous and green bean Monday - bacon corn potato hash with fried eggs and watermelon Tuesday - maybe homemade pizza. Crazy schedule tomorrow afternoon- might be feeding them fast food in the car Wednesday- sausage and tortellini soup with spinach Thursday- sloppy joes and sweet potato fries Friday - leftovers or out

I started on Saturday this week.
Lime grilled talapia with veggies Chicken apple sausages with cauliflower Steak and garlic green beans Garlic Roasted chicken potatoes and asparagus Lemon herb chicken with Brussels sprouts
divanerd, That sounds great! I think I'm going to steal your double meal plan and grab the ingredients on my way home tonight. The enchiladas will be an awesome lunch for me all week.
My sister made chicken salad with cut apples and grapes in it and it was amazing
That is how we make it where I'm from (MI). You could also try apples and dried cranberries or dried cherries. (Chicken salad with dried cherries is a very MI thing.)
Mon-Teriyaki chicken, rice, roasted broccoli and cauliflower Tues-leftovers Wed-pork chops, scallop potatoes, roasted veggies Thurs-leftover night Fri-DD & I chicken nuggets and tater tots, DH fend for himself Sat-brisket or pork loin (depends on what sounds good Friday)
DD has practice Tu/Th/Fr from 4-7 and eats a big snack dinner after school and then just grabs fruit or something small after practice. Which is why I'm trying to make those leftovers fend for yourself nights.
