Well, I drive an SUV with crappy gas mileage so I won't recommend my car LOL However, I've been looking at downsizing and really like the Honda Civic. Great gas mileage, affordable, and roomy for the size car that it is.

I have a Hyundai Sonata and I absolutely adore it my gas mileage is pretty good on the highway but since I don’t travel that much I don’t know what it is. I do recall driving to New Jersey and it being much cheaper than I thought it would be.
We’ve had really good luck with our Hyundais, H drives them so hard and we typically don’t have too much in the way of repairs other than just normal wear and tear. I cannot say the same for my Toyota and my Dodge which were the worst cars on the face of the earth and still give me anxiety thinking about them to this day. LOL

I drive a subaru impreza sport. Its a wagon, but a sporty one. I love it so much. But I agree that you should absolutely look for an electric or a hybrid. Subarus are mostly PZEVs, but that's really not good enough. I often wish I had gotten a hybrid something instead of my subaru. But my subaru is so pretty. . .
It is considered a SUV but it gets excellent gas mileage (above 30 mpg in Eco mode). I have the 2018 Hyundai Tucson. The trunk space is great and I love everything about this car. It combines all the advantages of a sedan car with the advantages of a small SUV.

I love my Prius. It is super reliable, comfortable, and has a ton of space. I can fit a crate in the back for when I transport dogs, and it can hold more than you would think. I bought a pre-owned 2014 three years ago, and I have been so pleased with it. Plus it gets around 45-55mpg, depending on temps and how I'm driving.

Same. I have a Subaru Crosstrek, which is basically a taller, slightly sportier-looking version of the Impreza wagon. I love it so much. Subaru now makes a Crosstrek hybrid that I will probably buy when it's time for a new car. It's a small crossover, which is great because I don't like driving a big vehicle but the back is very spacious. AWD is standard on all Subarus, and the boxer engine gives it more stability.
If you can charge an EV at home, we love the Hyundai Kona EV. It has a range of 240 ish depending on weather and drives beautifully.
ETA: Just saw that you don't want an SUV - this is a crossover SUV so may be too big for you. I like my Prius C. They don't make them new any more but they're a great little car.

I went to Subaru because I was interested in a Crosstrek, but then I saw the impreza sport wagon on the floor and had to have it. LOL.
We recently got a Honda Civic. It's a 2015. Unfortunately for me, my H has the longer commute so I don't drive it much, but I've been really happy with it when I do. It gets about 40 mpg (I think it can actually get more than that if you drive mostly on highways), and seems like it has plenty of room. We replaced our Jeep with it, so it's a lot smaller than that, but so far no complaints. I guess we haven't tried to move any large items yet but for normal stuff like groceries, road trips, etc it has plenty of room. It also feels roomy in the driver's seat.
I actually love it, which is saying something because I was not ready to buy a new car and pretty bitter about losing our Jeep. So it really had to win me over. But it's a great consolation for that, because it's a great car.
I also love parking it - it's small so it's easy to park. I drive a 2003 Buick LeSabre as my commuter car though so maybe that's just me being excited about parking a small car, lol.

I haaaaaaate my Honda. Nearly ditched it (only 4 years old) in December, but they agreed to fix it no charge, and so I still have it. And I have to take it in AGAIN for a new weird chirping noise it's now making.
So I'd avoid Honda, especially a newer redesigned vehicle, like the plague. I have a Pilot, which is bigger than you mentioned, but this has been nothing but problems for me. If their other redesigns are similar, run far far away.
When it's out of extended warranty (so glad I bought that), I'm buying a Subaru. Test-drove the Ascent, loved it, am ready to walk in a buy one when the next big thing on the Honda goes, post-warranty. If you want a smaller car, the Forester seemed really nice too.
I drive a 2007 Subaru Forester and it is still chugging along as well as the day I bought it new. I get it detailed every spring, and the paint job is almost right off the showroom floor. It has quite a bit of pep, but is not really gas friendly. If something happens, I will probably replace it for a newer model.

I have a Honda Fit, it's my second one and I absolutely love it. I had the first one for nearly 12 years before giving it to my baby sister when she got her license.

I have a 2018 (I think, it's the first year they reintroduced the hatch) Civic hatchback and I'm happy with it. I mostly drive on the highway and use eco mode and can easily get 40 mpg in those conditions.

I LOVED my Honda Fit. It's such a great little car with so much space. I was so mad when someone rear-ended me and totaled it, and then my husband convinced me to do the environmentally responsible thing and get the Prius C to replace it, saying they're so similar. They are, and I like it fine, I just don't love it. And it's not like the Fit is a gas hog either!!
There's actually a Black Honda Fit in my parking garage and about once a month when I'm distracted I walk up to it and try to get in before I realize it's not my black Prius C.

I have a Prius and love it. Ticks all your boxes. It is surprisingly roomy, and the backseats fold down (together or separately) to provide even more trunk space. I've fit a card table and four folding chairs back there.
That said, my H drives an Elantra and hates the Prius. I think it sits lower the ground and doesn't have quite the same horsepower.

Or I could have just quoted this, LOL. Almost to the letter, but mine is a 2015.
I'm always surprised how comfortable my husband's prius is (even in the back seat) and how much we can fit in the trunk. It's not a sedan but the gas mileage is phenomenal.
We went from a Sonata Hybrid (which is a little bigger than an Elantra, but, not too much) to a Niro Hybrid (our black Friday purchase haha) and we really, really love it. it's loaded with tech and convenience features, which is really fun- but, the safety features feel substantial and well implemented, too. We have an EX Premium and get 57-58mpg, the PHEV and EVs are fantastic if you can get your hands on them, though (we waited for months for ours, they just are really slow to make it into FL).
FWIW, the Kona is very, very close- the backseat area is shorter than the Niro, which was a problem for us (with soon to be teens)- and there are some tech differences that pushed us this way. We really liked and considered it, too, though.
I have a manual transmission Ford Fiesta. I think it’s technically a sub-compact, but I get great gas mileage (30+ mpg city, up to 40+ highway). The trunk is surprisingly big for how small the car is. Although it looks small, the front seat doesn’t feel small due to the large windshield. I got mine last June. It was 2 years old with 32k miles on it. The back seat is kinda small, but my kids don’t complain.

Mine broke down on Christmas Eve and I thought of you.

Lol, my H has an Elantra and prefers the Prius! When we were test driving it he said that it had better acceleration than his car, and it's way more comfortable. His car is old, though, and all of the finishes are coming apart. I actually got a pretty bad cut on my hand from the chrome finish on the handrail peeling off!
I love Toyotas. We have the RAV4 and will be getting another when it's time. But I have a really old Corolla that's still on the road. Good mileage and no big repair bills.
Ford Fusion SE 2015. It is amazing and drives super comfortable (quiet and smooth). I feel like the trunk is sufficient and the back seats fold. It has good gas mileage. The seats are comfortable. I had a Prius (2005) and any trips over 2 hours, I sat on a pillow because my ass would fall asleep. The electric battery went out and the whole thing went down hill pretty fast, even after I replaced the battery ($2,700). I had to have broken down 6 times in a year. It really turned me off of electric cars. If my current car was totaled today, I would buy the exact same car tomorrow.
