I need to figure some things out for this week. I have lots of leftovers, lots of chicken, and a pork tenderloin.
So maybe tonight will be leftover beef tenderloin from last night's dinner. I also have lots of taco chicken left over from Saturday night's dinner, but not tortillas... so maybe rice? Probably a chicken, broccoli, and rice casserole at some point. I have to shop at some point for a few staples, but I'm trying to hold off as long as I can...
Sunday - Ham and potato soup Monday - Soup leftovers Tuesday - TBD if beau comes over or not Wednesday - Italian sausages with peppers and onions Thursday - Ground turkey sauce and spaghetti (new recipe to try) Friday - Leftover spaghetti Saturday - Homemade pizza Sunday - Breakfast for dinner
twinmomma, I made a great bolognese in the Instant pot using ground turkey. I think it was the skinnytaste recipe with some modifications. Just in case you're looking for another good sauce recipe.
Monday: fish, Brussel sprouts and those little potatoes that are all different colors Tuesday: Turkey kielbasa, onions, peppers, sliced new potatoes and cheddar cheese in a skillet Wed: Tuscan bean soup, salad and biscuits Thursday: pot roast with cream of mushroom soup mixed w French onion soup mix, with carrots celery and potatoes
We have a ton of ham left over from Easter. I’m trying to find ways to use it up.
Mon- ham bone soup Tues- mushroom risotto (accidentally bought a bigger container of mushrooms than I meant to, so using those up), Caesar salad Wed- takeout Thurs- chicken noodle soup Fri- pizza
Monday -- Kebabs and roast potatoes Tuesday -- Stir Fry Wednesday -- Chicken and veggies (whatever we have -- I think it might be carrots and green beans but this works with almost anything) Thursday - Chili Friday -- Probably chicken nuggets and tater tots. We've been doing a kid dinner Fridays.
We're still doing Blue Apron, so that's two meals a week plus a night of leftovers (we do the 4-person meals and the kids don't eat much of them). Otherwise one night is turkey tacos. The rest are up in the air
Yesterday: smoked turkey legs, and smoked twice baked potatoes (it wasn't good, I had 3 bites and called it quits, DD ate a thank you bite of each and all the leftover rice I heated up for her) DH loved it..? Mon: leftover for DH, chicken nuggets and tater tots for DD & I Tues: chicken tacos via crock pot Wed: Spaghetti Thurs: Fish, rice/noodles, roasted broccoli Friday: crunchy chicken, scalloped potatoes, green bean casserole Sat: ?

Saturday- baked eggplant and orzo Sunday- grilled steak, zucchini and pineapple Monday- lentil soup from the freezer Tuesday- turkey can salad and buttermilk biscuits that DS (11) will be making Wednesday- spatchcock chicken, potatoes and green beans Thursday- homemade pizza Friday- sausage and tortellini soup Saturday - cauliflower cake and tossed salad
