I've been horrible about cooking the last few weeks and am using DD's gym schedule as the excuse. Practice is M/Tu/Th 4:30-7:30 I need to get back to eating and cooking better
Mon: fend for yourself Tues: chicken tacos (easy to eat at different times) Wed: steak tips in gravy, potatoes, veggies Thurs: ? Fri: Salmon, rice, broccoli Weekend: ?
Monday - Chicken Tikka Masala and rice Tuesday - Leftover chicken or an omelette (I'm home alone) Wednesday - Italian sausages and veggies from the farmstand Thursday - Pasta with veggies Friday - breakfast for dinner
I've recently discovered that if I chop up veggies and roast them in the oven with just olive oil, salt, and pepper then the girls will basically eat anything. I just keep mixing random pieces of new veggies in each time and they don't seem to notice or care. Even more so if I let them help me chop. So at this point, we have that with every meal whenever possible.
I have no meals planned this week. DH is camping and the kids were supposed to be with him, and I had planned a combination of eating through my remaining salad materials, dinner with friends, and cheese and crackers for dinner. Now I’m trying to scare up dinner for everyone. I can’t go grocery shopping with everyone based on behavior and delivery has been unpredictable, soooo everyone is getting what they get this week.
DH is traveling for work this week (the joys of being an essential worker). So, it's just the kid and I. Monday - Frozen pizza and fruit or veggie Tuesday - Fish sticks and some sort of side Wednesday - Food...that's as far as I have gotten. I suspect that I will be digging through the freezer and pantry this week. But maybe we will do things like sandwiches which are easy and they like.
Sunday- chicken broccoli rice casserole that I thought was awful (New recipe) but MIL and DH liked. Monday- pulled pork sandwiches w potato salad, beans, cole slaw Tuesday- frozen baked ziti, salad, garlic bread Wednesday- antipasti dinner Thursday- tacos Friday- pizza
