Any other suggestions for things she can make/ cook? Any brands of things?
My kids have cheese, crackers, and fruit almost every day. I wish they’d eat PB&J more now since they can’t have it at school. Other ideas...
Hummus, pretzels and veggies Chocolate hummus with graham crackers Guacamole and chips and veggies Pasta Bagel pizzas English muffin pizzas Lunch meat rolled up or in sandwiches (my kids would die if I offered this)

Black bean & cheese quesadillas (canned beans, pre shredded cheese and the 8yo can make them). They have that probably twice a week, sometimes with avocado slices. Sometimes with cherry tomatoes.
Some combo of Rolled up turkey, salami, etc Cheese and crackers Fresh fruit, fruit cup Pretzels and hummus Canned soup (chicken and stars, chicken and stars, do y’all eat any other kind?) Scrambled eggs and fruit
We also usually have leftovers of some kind available.

DS loves making his own pizza lunchables with mini naan bread and pizza toppings sandwiches pizza bagels ants on a log leftover spaghetti noodles and frozen meatballs
My kids are obsessed with omelettes lately. They like to help chop up some veggies to throw in and feel like very impressive chefs flipping it in the pan themselves. Bonus: they make me one too because they like cooking them so much!
I'm always impressed/intimidated/overwhelmed when I see lists like this.
95% of the time on school days, my kids eat PBJ's. For the other 5% of the time, if we have leftovers, pizza (for DS) or mac n cheese (for DD).
Weekends don't look much different, except the pizza or mac n cheese would be fresh vs. leftover. Occasionally nuggets will make an appearance on the weekend.
It may not be the "spice of life" (variety), but it's easy at least.
At the office we do (microwave & griddle available) leftover Mac & cheese Quesadilla (DD us happy with just cheese) Tacos/burritos (heat up taco meet and either put it in a hard shell or a soft shell) leftovers from dinner grilled cheese leftover Pizza tri colored pasta salad
At home dinos chicken nuggets with tater tots, steak fries, or rice Canned beef with noodles chicken patties (Costco breaded chicken burgers) spaghetti (leftover sauce fresh noodles) goulash (fall/winter item that we eat as leftovers) fresh mac & cheese
DD doesn't eat sandwiches like PB&j or lunch meat. librarychica, DD likes the vegetable beef with ABC letters or chicken n stars but no chicken noodle. I prefer Progresso chicken with wild rice, chicken noodle, chicken barley, beef barley as they all heat up in the microwave nicely.

We did a fend for yourself and kept the same as when they pack school lunches. Protein drawer, fruit/veg drawer, dairy drawer and grain and they pick one from each category with a milk box.
Pretzels with peanut butter was a big hit since they can’t take PB to school.

We do brunch a lot when home- French toast with fruit, Egg in a hole, etc
Pasta with Parmesan and peas Leftovers Soup- I make homemade soups in my instant pot a lot- broccoli cheese, vegetable soup, tortellini, and Sausage, potato, kale soup are favorites Grilled cheese French bread pizza Quesadillas Snack plates- protein, fruit, veggie, carb (this is usually what I pack for school)
Hahahah this has been the biggest PITA with the whole staying at home all day every day all together forever and ever to me.
My kids mainly eat: - air (I’m pretty sure one kid basically never actually eats lunch) - ramen - spaghettios - boxed Mac and cheese - Nutella sandwiches - miso soup - buttered noodles
This is with no fruit, no vegetables, no protein, just super processed carbs for lunch every day. We are killing it at this parenting thing.
I have other food, they just won’t eat it. To be fair DH is also really annoying at lunch time. And honestly he will go through a drive thru a couple times a week and will get the kids food too.
I give up. I cannot wait for school lunch to be an option again one day.
mrsGreeko - that menu is what my kids would prefer. And it’s what they get 90% of the time. But I save a lot of that for dinner since lately they’re just running by me in a sprint looking for something they can grab on their way back out to ride bikes or something.

FFWC - I have always made "grilled cheese" for my DD by putting bread in the toaster and then putting those floppy kraft cheese slices between the warm pieces of bread. She always liked them.
Now the dang nanny makes real grilled cheese in the frying pan with butter and my daughter thinks she's a genius. I"m so annoyed my crappy grilled cheese has been exposed.
Frozen dumplings are big in this house too As is ham and cheese roll ups Hummus and pretzel chips with a side of fruit and cheese Pigs in a blanket is always a huge hit Hard boiled egg and a fruit Frozen tequitos
