No idea. DS wants to try vegan and I’m at a loss. We aren’t vegan or vegetarian. I might be able to go vegetarian but I’m struggling to find vegan stuff he’ll eat. He likes tofu. Not a fan of beans. We shall see how it goes. We’re stocked with veg burgers because we like those but I have to read all the labels etc...to make sure.

A few things I have pinned (I know you said he doesn't like beans, but hopefully chickpeas are ok)!! I am sure you can sub out ingredients where needed! I am a vegetarian who doesn't like bell peppers (very common veggie ingredient for most recipes, but I just leave it out or put in something else) :-)
Yesterday we tried a new recipe: salmon and edamame stir fry with miso butter. It was SO good! And different from how we normally eat salmon. I overcooked the veggies a bit... I can never get zucchini sautéed without it turning to mush. It was still good, though.
Tonight we're having pizagna and salads.
Tomorrow I'm leaning towards ginger lime chicken with roasted broccoli.
Thursday will be leftovers.
Friday... I have a day off, so I could cook. But I don't know if I'll want to, lol. We'll probably do takeout
