Croquettes, empanadas, pot pie, tortilla soup, instead of chicken on Cobb salads, turkey and dumpling (or matzoh ball) soup, burritos or tacos, fried rice.
Really any recipe that calls for cooked chicken works.
Related question: what am I supposed to do with the carcass? I'm not great at getting the meat off, so there is still a decent amount on the bone. It feels wasteful to throw it away, but making stock seems like a lot of work.
We also have a giant turkey for two people, so I’m planning to sub turkey for chicken in Chrissy Teigan’s Sesame Chicken Noodles if DH isn’t on board with the casserole situation above.

So right after I wrote that I forced myself to throw the carcass in a pot with some vegetables. I guess I'll just leave it go until I have to go to bed. I also don't have a pot big enough for a 20 pound carcass, so I ripped off any limbs that I could, then made my H throw the rest away. Lol. I do not want to deal with this thing after today, so I'm going to try to just get it done.

It was just DH and me this year but the smallest fresh turkey they had was 12 lb. So we have a ton of leftover meat.
What’s your favorite way to use it up in a recipe?
I had a 12# turkey just for me! I'd say I don't know what I was thinking but actually last year's Thanksgiving got cancelled at the last minute so it's already been in my freezer for a year so I figured now or never. I see some tryptophan in my future diet.

We bought a 20 lb Turkey for the 4 of us (which is really for DH and I since the boys won’t eat much). I plan to freeze some, make enchiladas with black beans and corn, Turkey and dumplings, and possibly some chili.
I’m no help. The only thing I make with leftovers is grilled cheese.
Wheat bread, havarti cheese, layer of cranberry sauce, stuffing and Turkey. I use leftover garlic herb butter for the outside and dip the sandwich in warmed gravy. It’s so damn good.

Our go-to is a "curry" (in quotations because I'm sure it bears no resemblance to real curry) ... Turkey, gravy, curry powder, any vegetable you can find (corn, peas, beans, limas, carrots ... Mom used to have a container in the freezer for the last few bits of veggies and she'd use it in this). Serve over rice. I'm making this tomorrow!
