What’s cooking? Today: I had the BEST hot and sour soup for lunch, it was exactly what I was craving. Tonight will be turkey meatloaf, green beans and baked potatoes Monday: skinny chicken parm, broccoli and pasta Tuesday: chili and grilled cheese. DS2 requested the grilled cheese part Wednesday: korean beef bowls, brown rice and edamame Thursday: crockpot pork roast, applesauce and asparagus
We had spinach salad with smoked trout last night.
Buttermilk oatmeal waffles, eggs, bacon, and fruit tonight.
This week is potato, poblano, and refried bean tacos.
We’re heading up to the mountains Thursday morning, so I’ll have to figure out easy stuff for that at some point this week. We’ll hit the grocery store on our way there, probably eat in two nights and out for one.
Tonight bc wants to make some stuffed chicken legs? He saw it on some show. You debone the leg and stuff with sausage.
Monday: leftovers or bean burritos Tuesday: guiso Wednesday: out for a bday Thursday: fish, veggies, rice Friday: probably pizza because we will be over it

Just wanted to share, for anyone that likes menu planning websites - I recently stumbled across BetterFromScratch.com and so far, every recipe I've done (4 or 5 now) has been amazing - quick and delicious. They have a weekly planner, which is nice - my only complaint is that it seems a bit pasta-heavy, but I've been able to mix it up with my own tried-and-true stuff.
Last night: Potato leek soup Tonight: Italian paninis, raspberries, chips of some kind Mon: Chili + cornbread Tue: Blueberry lemon French toast bake + sausage patties Wed: Tacos Thu: Crockpot Philly cheesesteaks Fri: Dragon noodles Sat: Fend for ourselves because I have a virtual event
isabel, how was the fancy cornbread last week? I was unable to convince my H to throw caution to the wind and try it tomorrow, but he is going to try a from scratch Betty Crocker recipe on Monday.
Nonny, it was good! I had a friend make it since she offered to make a side. I wish I had warmed up my slice because I bet it would have been tastier warm. I would make it though after having it.

I’m trying to run to H Mart this week so very well may change. It’s too far to go regularly enough to know what they will have in stock and I’ve learned not to count on anything!

Pork chops with mushrooms and cabbage tossed with egg noodles (made a double batch to have again whatever day I go to H Mart)

Tonight - H and I went to a friend's house Tomorrow - Pork chops and fried taters Tuesday - Concessions at a wrestling meet Wednesday through Friday - no idea...I am so tired of planning and cooking Saturday - regional basketball so probably fast food on the way home
I'm only cooking twice this week so both meals will provide good leftovers.
Chicken tinga (I'll probably have to cook fresh sides on leftover night, but at least the main will be done)

I'll be cooking tonight and tomorrow. Then the rest of the week should be super easy. I really want to make the chicken in my Dutch oven, but alas, it will be dumped into the slow cooker. Looking forward to some amazing, hands free smells this afternoon 😄

We had a busy weekend and didn't plan. H is off today, so he's going to run to the grocery store
M: chicken tenders (marinated in pickle juice, breaded and pan fried) with various dipping sauces and a big salad T: green chicken enchilada casserole W: grilled ham and cheese sandwiches with homemade tomato soup Th: pizza F: out with my brother and SIL S: orange chicken, broccoli and fried rice S: spaghetti and meatballs, salad
Sun-DD made homemade pizza via the bread machine (she is getting really good at this one) Mon-beef stew via crock pot Tue-fend for yourself Wed-Stuff peppers (freezer meal and cooked in the crock pot) Thurs-Pork Stew Fri-Meet Day so who knows. Warmups are at 5:45pm Sat-b-day dinner!!
