@dadcylongfellow, those Carmelitas have been my signature thing to take places since 2003ish, but I haven’t made them in forever! (The recipe I use has evaporated milk instead of heavy cream, but I think I’ll try the cream the next time.)
I don’t really have a favorite brownie recipe. I usually just buy a random box and throw in a handful+ of additional chocolate chips. I used to use a baking method that made them all like middles, but now I Just bake them normally.
I have limited options here. Would it be possible to combine brownie mix and cookie mix to get an approximation of this? The cookie mix alone is way too sweet, but maybe dark chocolate brownies would cut it nicely. I don't have the tools to make anything from scratch.

Absolutely! This box makes a 9x9" pan, and the cookie dough portion is approximately 8-10 cookies if I had to guess.
Another vote for the Ghiradelli triple chocolate brownie mix. I buy it at Costco. Add the Praline Pecans they carry and crush them up and sprinkle on the top and they are sooooo good.

Thanks @psugrad. This thread inspired me, and I placed an order last night for various mixes from brands I've never heard of but have to be better than betty crocker.
I take snickerdoodle bars with a layer of chocolate ganache on top.
When making brownies from a mix, I usually add some crushed freeze fried raspberries or diced candied orange peel to step it up a notch. (My go to mix is the Trader Joe’s one because of the package size. I don’t have room to store the Costco Ghirardelli box and haven’t found it better the TJs in the past - but my mom is the one who makes them from that mix not me,lol).
