I second this suggestion - and don’t cut corners when it comes to boiling the water. It makes a difference!
It's really the best chocolate cake recipe out there, and is insanely un-dry. I like to toss a tsp or two of espresso powder in it. Doesn't make it taste like coffee, but really intensifies the chocolate flavor.

Ok, I got panicky when I realized I had to make the cake and an appetizer, salad and lunch entree in a few hours and hadn't even gone grocery shopping so I went with one I made before because I knew how it would turn out but I have bookmarked many of these.
I also made a kale apple salad with apple cider mustard dressing, whipped ricotta with honey, fresh figs, prosciutto and olive bread, and fresh pasta with a Trader Joe's autumn pasta sauce, red pepper flakes and burrata cheese
This is the best cake and my kids request it every year. I use coconut oil and it's amazing. The batter will be runny, but don't worry it comes together perfectly.
