I’ll echo the simple syrup - I usually find the simple syrup drizzle or another drizzle is the only way for a scratch cake to be {redacted}. It’s honestly why I tend to use box cake. I think anything with oil in it as opposed to only butter tends to be a little more m-word.
2 cups packed dark brown sugar ¼ tsp salt 1 ¾ cups sifter all-purpose flour ¾ cup sifted unsweetened cocoa powder 2 tsp baking soda 1 tsp baking powder
1 cup buttermilk 1 cup strong coffee, room temperature ½ cup veg. oil 2 eggs
Oven: 350F Bake:25-30
Grease and flour 2 9” cake pans Sift dry ingredients together in bowl Wisk wet ingredients together. Mix wet into dry ingredients. Pour into pans. Bake.
Apple Butter Cake
½ C butter, room temperature 1 C sugar
4 eggs, room temperature
2 ½ C sifted all-purpose flour 1 ½ tsp baking soda ½ tsp salt ½ tsp cinnamon ½ tsp nutmeg Dash cloves
Cream butter and sugar until light and fluffy Add eggs one at a time Sift dry ingredients together Add to butter mix alternately with buttermilk and apple butter, add walnut or pecans if desired Pour into cupcake papers, or cake pans
Buttermilk White Cake
1 ½ cups unsalted butter - room temperature 2 1/3 cups sugar
3 large egg whites 2 tsp. vanilla extract
3 ps cake flour ¾ tsp baaking soda ¾ tsp salt 1 ½ tsp baking powder
1 ½ cups buttermilk
Oven: 350F Bake:23-35
Line three 9” cake pans with parchment/wax paper and butter & flour
Butter & sugar in mixing bowl. In another bowl egg whites and vanilla. Third bowl with flour, baking soda, salt and baking powder Measuring cup with buttermilk.
Cream butter and sugar on med speed until light and fluffy ~~2 min. scrape down bowl. Add egg whites & vanilla one at a time, allow to incorporate fully after each. Scrape bowl. Add flour and buttermilk, 1/3 at a time each, alternately until incorporated. Pour into pans. Bake. Cool for 10 min before turning out of pans. Cool completely before decorating.

Hershey’s Perfect is the only chocolate cake recipe I’ve found that’s un-dry (the frosting is good too) - it’s my go-to when I want to make a homemade cake. I haven’t found a vanilla one yet.

mala,I am open to any kind of cake. The honoree's only request is that it not be dry. We have a family carrot cake that is very not dry and I have a pumpkin dream cake recipe I like but I wanted to crowdsource a bit. I am a scratch baker generally but am not adverse to something like a WASC in a pinch.

Smitten Kitchens Moms Apple Cake is the bomb-dot-com. So extra NOT dry! And seasonal! It’s not the kind of cake you frost but for ppl with insane sweet tooths, I’ve drizzle caramel sauce over. I think it’s plenty sweet without though

I also use the Hershey but I do the special dark cocoa and hot coffee instead of boiling water. My kids birthday party was on Sunday, and we are still eating cake! It still tastes fresh.

Tres leches. Yellow box cake (3 eggs, butter, and milk) and condensed milk, evaporated milk, and whole milk. Super easy. I usually make mine the night before.
I think part of the key for any cake is weighing ingredients so the proportions are right.
I agree! I always do. :-) Dry cakes are not an issue for me overall. (If you've seen the Golden Girls, this feels like the moonlight madness episode where Rose and Dorothy discuss cupcakes). This person just prefers a more undry cake than your standard cake.
I think part of the key for any cake is weighing ingredients so the proportions are right.
