Since it's going to be cold and snowy this weekend I want the ultimate cozy grandma food I can think of. What's your favorite recipe for casseroles/hotdish? Dishes? What is the plural of hotdish?
I love tuna noodle casserole! It’s so smelly but the ultimate comfort food for me. 3 packs of tuna, a can of cream of mushroom soup, 3/4 cup milk and 3 cups of cooked noodles. Bake at 375 for 20 minutes. I usually add buttery breadcrumbs too.
Goulash - elbow mac, ground beef or sausage, diced tomatoes, onion ang whatever spices I'm feeling in the moment and cheese - we call it Grandma casserole because my Grandma always made it. I never made it with cheese until I made it for H it was his request and nothing wrong with cheese LOL
Always tater tot hotdish. I literally bought more tater tots today since it's winter and such a family fave in the cold temps. If this appeals to you, let me know and I will walk you through the recipe that's in my head. There is no standard that I'm aware of, so my version might be upsetting to people with their own tater tot traditions.
But really, google a recipe, then dress it up as you go. Saute your ground beef with onion and add smoked paprika, garlic, and other stuff that can add some umami-- Worcestershire sauce, for example. You pick the veg you want; I prefer green beans. You decide if you want to add cheese to the mix or not. We do because cheese, both in the filling and on top. YOLO.
I have the book that recipe comes from (I think I originally saw the recipe itself in a magazine YEARS ago) and have liked everything I've made from it.
I'll be making Jalapeno Popper Chicken Casserole this weekend. There are only two of us, so I make the full recipe, but split it in half, so that we get two (one to bake and one to freeze).
I don't think the green onions add anything, so I leave them out. I also used a small can of diced jalapenos because I'm lazy, and then top it with panko and Trader Joe's crispy fried jalapenos because it needs a bit of crunch (I don't freeze it that way though).
It's full of dairy and bacon and is so bad for you, but so, so tasty.
I agree with tuna noodle casserole, but it's very easy to make your own white sauce instead of using canned soup. I don't like mushrooms, so I make it with a ton of celery and dill.
I'm also craving beef and barley soup and chicken Tikka masala, I doubt they count as hotdishes though.
I bought chicken to make salsa chicken in the crockpot. I add taco seasoning and black beans, then make quesadillas. Perfect for a weekend with a crap load of snow coming to eat with football playoffs. 😀
I made salsa chicken last weekend! So yummy and so many great meals.
I also love to put taco meat (ground beef, usually) at the bottom of a casserole dish, top with refried beans, a layer of cheese, then spread cornbread batter over it all. Cook at whatever temp the cornmeal box indicates until it’s nice and golden brown. Hearty and cozy.

My MIL makes delicious chicken and noodles. This is her recipe in her words.
I don't really have a recipe for my chicken and noodles. I just put a whole chicken in my crock pot with lots of salt and pepper and put in one whole box of chicken broth with 2 bay leaves and cook on high most of the day. About 45 min before eating, I remove the chicken and bay leave and shred the chicken after putting in a bag of No Yolks broad noodles. At this time I also add another box of chicken broth. I add the chicken to the noodles after shredding and wait until noodles get done.
Gorgonzola pasta - rigatoni, cream, gorgonzola, roasted red peppers, garlic, parm, and other spices to your liking (basil, nutmeg, red pepper flakes)
Tator tot Casserole - same as everyone. I put seasoned ground beef w/ onions, cream of soup (make you own) - I use mushroom, chicken, and celery, tator tots, and cheese

French onion soup casserole - I make extra soup while making it.
