Tue: Lasagna leftovers and another bag of salad
Wed: Shepherd's pie using the leftover potatoes from Monday
I think I've got the stuff on hand to make broccoli gruyere soup, but then I'll also need to make pretzel buns, and I'm not feeling that today, so it's not going on the list yet.
I also want my H to make Thai chicken stew, but we need carrots.
Now I'm going to go look up Marry Me Chicken since it's on everyone's lists.

Sunday - smoked ham with scalloped potatoes and salad Monday - salmon stirfry with rice noodles Tuesday - smoked chicken with leftover scalloped potatoes and salad Wednesday - smoked chicken (depending on how much is leftover - if not a lot, then seasoned ground turkey) rice bowls with beans, avocado, etc... Thursday - white bean chicken chili w/ cornbread Friday - out
do you have a link for the tomato lime chicken? I have some thighs in the freezer that might work well with that 🙂
So it’s really just my (Persian) DH’s way of making chicken dinner. I put a couple of bone-in, skin on chicken breasts in a big pot with about half an onion sliced thin, add boiling water to cover the chicken (and turn on medium to keep it boiling), then add salt, pepper, some turmeric, a pinch of saffron, a pour of bottled lime juice, a squeeze of tomato paste, and some carrots and potatoes cut in big pieces (like just halved). Simmer for an hour. Then put a big shallow pot with some oil in it on high, transfer the chicken into it and try to get the lid partially on while it spatters everywhere, then add the carrots and potatoes back, ladle the juice in, add a tomato cut in half along with more lime juice, partially cover and simmer another half hour or so. It’s basically a one pot meal.

All American style over here this week. DH feels loved when I make homemade hamburgers. LOL. Chicken thighs or drumsticks are usually in rotation, and we haven't had them on the menu in a while. The meatballs I've been wanting to make for a few days, and am going to try a new approach with boiling them in hot water before tossing them into the sauce. Excited to try this method!
We're coming out of 3 weeks of illness in our home, so I am both excited to get back to cooking, and being mindful not to over-do it. I usually have salmon on our weekly menu, but that would mean an extra trip to the store that I don't want to make.
I'm also preparing for this week: - homemade bagels - sandwich bread - sourdough loaf - waffles to freeze - breakfast egg bites to freeze

Can you tell me more about these two? Do you use pasta in the chicken part casserole? And how do the gnocchi and "pie" go together? Both meals sound delicious.

S: red wine braised bone in short ribs with creamy polenta and salads. M: ham and swiss sliders with roasted broccoli and sweet potatoes T: lasagna soup and garlic knots W: chicken cobb salads Th: H has a tattoo appointment at 4, so we'll just all fend for ourselves with leftovers F: Ramen S: dinner for a surprise 40th birthday for a friend
Last night was Thai coconut curry with shrimp Tonight- shrimp tacos w/ pico de gallo and guacamole Wednesday- not sure, maybe a nicoise salad Thursday- H is making steaks, David is making french fries and I'm making some sort of green to go with it Friday- we have a comedy show, so out to eat at a gastropub nearby Saturday- on my own for the night, so probably pick up sushi Sunday- out for a late brunch
