LOL that's about what my list looks like. I'm working on my grocery list now.
Tentatively thinking:
Pork roast and carrots Quiche Turkey meatballs and potatoes Chicken... something. Might try the "marry me chicken" on skinnytaste but would rather make something tried and true. Idk.
We had a busy Saturday so I made a lasagna yesterday morning so we had that last night and my husband loves it so much he Saud he'd have it tonight. haha
Monday: tofu veggie stirfry
Tuesday: game night I'll make in advance again. Tuscan white bean and farro soup
Wednesday: burrito bowls
Thursday: probably baked chicken with roasted broccoli and quinoa

Tonight: Skinnytaste Marry Me Chicken, mashed potatoes and green beans Tomorrow: Mediterranean chicken and rice bowls with tomato cucumber salad Tuesday: chili Wednesday: Skinnytaste arroz con pollo, I’m also taking beef tips and mashed potatoes for a friend that’s having surgery Thursday: cheeseburger salad
I think I'm going to roast a whole chicken today (if I can detach from the couch lol) and that plus the bolognese I made yesterday should make weekday dinners pretty easy.
I do want to make green curry later in the week - probably Thursday or Friday. I'll use leftover pork tenderloin and shrimp for that.
I also have salmon and tofu. We almost always have salmon on Mondays, so I think our week looks like this:
S: Miso roasted chicken M: Salmon T: Leftover bolognese W: Leftover chicken or something with tofu T: Curry? Or leftovers F: Curry... or takeout (we set a goal to reduce takeout this year, but I can't remember if next weekend is our 'no takeout' weekend or if it's just limited to one day + no apps... I should write it down 😕)
All sides TBD which gives me room to be creative/spontaneous 🙂

DH is on a work trip Monday to Thursday, so I bought a couple things to throw together pasta in case I feel motivated, but otherwise the kids will eat their usual and I’ll scrounge.
Sat: turkey kielbasa, potato rösti, red cabbage, peas Sun: harissa lamb patties, naan, tomato-cucumber salad, lemon-garlic yogurt sauce Mon: sumac chicken thighs, rice, fattoush-y salad Tues: carnitas in the slow cooker for tacos, corn, jalapeno slaw Wed: creamy beef and orzo, broccoli Thurs: 5 Guys fundraiser night Fri-Sat: I'll be away with friends and don't care what gets eaten at home! Friends and I will do charcuterie/cheese/whatever else sounds good one night, and go out the other.

Can you point me in the direction of any of these recipes? This menu sounds amazing but I wouldn’t even know where to start.

All I know so far is veggie beef soup tonight and leftovers tomorrow night. And Wed. night, I have a work happy hour/dinner thing so I'll be having BBQ and H will fend for himself.

I bought a Breville Smart Oven Air Fryer Pro yesterday ($70 very gently used! they are $630 in Canada). I want to try using it this week for dinners because it's just DS and I. It heats up so quickly and it's the perfect size to cook for 2 people.

So it’s really just my (Persian) DH’s way of making chicken dinner. I put a couple of bone-in, skin on chicken breasts in a big pot with about half an onion sliced thin, add boiling water to cover the chicken (and turn on medium to keep it boiling), then add salt, pepper, some turmeric, a pinch of saffron, a pour of bottled lime juice, a squeeze of tomato paste, and some carrots and potatoes cut in big pieces (like just halved). Simmer for an hour. Then put a big shallow pot with some oil in it on high, transfer the chicken into it and try to get the lid partially on while it spatters everywhere, then add the carrots and potatoes back, ladle the juice in, add a tomato cut in half along with more lime juice, partially cover and simmer another half hour or so. It’s basically a one pot meal.
