Sunday: Mac n cheese, veggie (It's late now, so it's got to be fast and not popcorn.) Edited to say: Nope. Granola cereal. It was even later than I'd planned.
Monday: Not sure, probably soup + Grilled cheese. I need something quick.
Tuesday: veggie chickn cutlets, cous cous, veggie
Thursday: Maybe out with a friend or a tofu burrito (Willys. IYKYK)
Friday/Sat.: Not sure, things from the pantry/freezer. I may make a pasta and homemade pasta sauce (OMG! Yes, something I actually make from scratch.) I have some ingredients that need to get used up.

My lunch for the week: Veggie wrap (artichokes, roasted red peppers, cukes, pickled onions & arugula) w creamy tofu-harissa sauce. Maybe adding some tuna? Tbd
Mon - either a frittata or making omelets with left over ham and veggies Tuesday - ham and bean soup, some kind of bread made in breadmaker or cornbread, salag Wed - sliced steak with chimchurri, veggies Thur - not sure Fri -
Looks like only two meals my kids won’t eat this week!

DH is away this week, planning to lean hard on Easter leftovers the first part of the week.
Sun: I made lamb, lemon-garlic potatoes, and coleslaw, other people brought greek salad, brussels sprouts, NC pulled pork, and rolls Mon: leftover pulled pork, stove top mac n cheese, broccoli Tues: leftover lamb pitas, tomato-cucumber salad Wed: actually cooking! NYT turmeric-black pepper chicken with rice and green beans Thurs: TJ's turkey burgers, whatever veggies are leftover Fri: takeout Sat: maybe birria ramen?

Mom-Wed I am traveling for work. There is steak in the fridge for MH and DS for tomorrow night. No clue what they are having after Thursday- tortellini, broccoli with garlic bread Friday- sheet pan beef and broccoli with rice Saturday- crispy cheddar pork with green beans and roasted potatoes Sunday- sheet pan everything bagel chicken with veggies and rice

I'm having a rough time w/r/t cooking lately. Or honestly, since the new year. I usually enjoy cooking but lately just don't have the motivation anymore. I feel like I go through this every late winter/early spring.
Has anyone tried the Kevin meals? I have two of those in the fridge that need to be cooked this week. I'll make those and put them over shirataki noodles. sausage and peppers taco salad

We really like the Kevin meals and lean heavily on them on nights where there just isn't time to plan or do much. I do like to add more fresh veggies even if it isn't specific to the dish because it just makes it easier to do a "one pan" style meal but that's obviously just personal preference.
Last night's dinner was a homerun - pan seared lamb chops, celery root and parsnip mash, snap peas with carrots, and a creamy cucumber and radish salad. Felt very springy and ate pretty light.
So the rest of the week probably won't live up to that 😅
Monday - pork chops with mango/pineapple salsa leftover from last Friday. Still need to figure out a veggie. Tuesday - salmon... maybe with roasted broccoli and sautéed peppers/onions. Wednesday - Thai green curry? Or leftover takeout pizza and salads. Thursday - rotisserie chicken... either hot with baked sweet potatoes and black beans or cold for giant chef salads. Friday - Depends on what we decide to have on Wednesday.
Monday- veggie ramen Tuesday - my birthday, I’m not cooking. Take out or fend for yourself. Wed - Moroccan quinoa Thurs- turkey burgers Fri- realistically, probably chicken nuggets Sat- dinner with friends
Last night- ham, scalloped potatoes and roasted zucchini Monday- burgers with salad Tuesday- chicken nuggets and fries with veggies Wednesday- grandma nuggets mac and cheese with leftover ham and green beans Thursday- kofta meatballs in pitas, with veggies or salad Friday- garlic butter Basa fillets with rice and roasted asparagus Saturday- tortellini and salad for DH and the kids since I am out.
Tonight -- leftovers from Easter dinner. Steak, mashed potatoes and I'll have to make another veggie because we ate all the asparagus.
I am off today and tomorrow and want to put together some make-ahead meals that I can do in big batches. A friend of mine is having major surgery this week and I want to do double-duty making some meals for my family and hers. I'm thinking chicken enchiladas and shepherd's pie, and with any luck those should get us through until Friday.
We are entering into baseball/softball season and will be out of the house at dinner time a lot..I need to get on the ball or we will be eating a lot of cereal and sandwiches.
M - We have leftover ham, so maybe ham and cheese melts Tu - Tacos W - Pasta w/ meatballs Th - Pizza F - Delivery thanks to tax season

We just got back from vacation where we ate all of our meals out, so I need to reign in eating habits this week. We are also starting out baseball season this week (although it's supposed to rain a bunch, so games probably won't happen, this menu is counting on rain outs, if we play it'll be different), so I need to start thinking about easy/quick meals. Or crockpot meals that can sit for 12 hours...
Monday: Chicken scampi, salad, garlic bread Tuesday: Salisbury steaks and mashed potatoes Wednesday: Lasagna roll ups Thursday: Chicken stir fry Friday: we're going to an MLB game for our anniversary (it's 4/4) Saturday: who knows

I'll also make potato & ham soup for lunches and spinach/ham crustless quiche bites for breakfasts.
Last night - ham, fried potatoes, Stove Top stuffing (we cannot figure out how to make ham without drying it out so the ham wasn't very good) Tonight - air fried thyme chicken thighs and mashed potatoes Tomorrow - orange roughy and mac n cheese Wednesday - barbacoa tacos Thursday - chicken noodle casserole DS will be gone Friday and Saturday so those meals will be on the fly and probably something he wouldn't eat Sunday will be leftovers
