Our meal plan came together more easily this week than most. I was even able to get to Costco today to get some of the proteins, and I apparently have a lot of the ingredients for the week on hand, so my grocery list is small!!
Sun: Steaks, Wedge Salad, Crash Potatoes Mon: Creamy Chicken Bacon Pasta with peas - this was supposed to be last week, but got moved. Tues: White People Taco Night Wed: Slow Cooker Mongolian Beef with rice and broccoli Thurs: Chicken Tortellini Soup, take n bake bread Fri: Marry Me Chicken, Orzo, Asparagus Sat: Frozen Pizza for the kids, H and I are going to a 50th birthday
DH is making smoked pork collar, roasted sweet potatoes and a salad for dinner tonight.
In no particular order for the rest of the week - Chicken Katsu Bowl - Spring Orzo Salad with Crispy Shallot Dressing - Crispy Parmesan Chicken Bites and Green Bean Honey Mustard Salad with roasted Sweet Potato - Grilled Asian Pork Loin with Thai Style Crunch Brussel Sprouts - Boursin Chicken with maple roasted carrots with Pistachio Feta Crumble
We avoided takeout this weekend!! 🥳 Well, kind of lol. We had pizza takeout last weekend and ate those leftovers Friday.
Saturday: made a special run to the local Asian store and then made the best Thai green curry with shrimp and brisket (leftover from St. Patrick's day), steamed veggies, and frozen dumplings.
Sunday (tonight): Salmon, leftover steamed veggies, and sweet potatoes with black beans.
Monday: Chuletas guisadas... except I'm using country style ribs so I'm going to shift the recipe to the slow cooker. Serving over spaghetti squash with sautéed brussel sprouts.
Tuesday: Leftover curry... or mapo tofu with baby bok choy and king oyster mushrooms.
Wednesday: Leftover chuletas guisadas if we have enough. If not, see Tuesday.
Thursday: I have chicken thighs. Might grill them on the Foreman and serve with giant salads.
Weird schedule this week, so easy stuff that can be eaten at various times Saturday : chicken and biscuits Sunday: leftovers and salad Monday: pasta salad and grapes Tuesday: sheet pan potatoes and veg, with sausage or maybe beef I have in the freezer Wednesday: leftovers Thursday: sandwiches Friday?
Sunday: Panera: soup + sandwich Monday: leftover quiche Tuesday/Wed.: soup+sandwich one night, tofu burrito from Willys the other Thursday: maybe out to pizza w/a friend or something from the freezer Friday/Sat.: TBD
Another week of DH OOT, but otherwise not too busy:
Sat: orzotto alla carbonara w/ peas Sun: birria ramen w/ corn Mon: shawarma-spiced salmon w/ couscous and salad, yogurt sauce Tues: chicken karaage, sticky rice, green beans (will probably swap w/ Thursday's breakfast for dinner, I don't know that the strawberries are going to make it 'til then) Wed: DD is making homemade hamburger helper and broccoli Thurs: scrambled eggs, bacon, tator tots, strawberries Fri: kids pick of takeout or delivery it's apparently national grilled cheese day, so we'll be celebrating, lol Sat: kids pick of takeout or delivery

DH leaves on Tuesday for a week and DS in on another week of only soft foods. DS will have pasta and meatball every night. We may throw in pancakes one night. I will have: Chicken and broccoli Pasta primavera Eggs Burrito
Tonight: Italian wedding soup Monday: green curry chicken over rice Tuesday: enchilada pasta Wednesday: gochjung buttered noodles Thursday: we’ll probably eat out — it’s science night at school and both kids have practice.

Tonight: lemon, parsley, and chicken pasta
The rest of the week the kids and I chose easy to ease back in after spring break especially since H is out of town:
Breakfast for dinner Charcuterie Tacos Grilled cheese (which the kids now call toasties) with tomato soup Take out (likely Thai since kids are now both equally obsessed)
We went on a long family hike this morning, then went to lunch. I had hummus and artichoke hearts with a salmon salad.
Monday- We're in the totality of the eclipse, so I'm *attempting* to make David an eclipse pizza. It'll probably turn out dumb but taste delicious. I'm making this Rao's sauce and noodle dish my H is obsessed with for him and I. David's baking cookies.
Tuesday- Thursday- H has dinner work events so I'm doing super easy dinners for me/pick something up- and David will cook for himself. Friday- sushi night Saturday- we have a gala to go to for David's school. We decided today that we are going to go and raid the open bar, pretend to consider the auction items, then skip the dinner and walk across the street to our favorite Mexican place for margaritas. When we discovered the proximity of our favorite restaurant to the event, we really had no choice, lol. Sunday- no idea- lazy day. Maybe go to our favorite food hall.

I also double the curry paste, but we like it spicy, and store-bought paste can be weak. I would love to try making my own but I haven't been able to source all the ingredients.

I have no idea. I planned the shit out of our eclipse trip but I have no idea what we will eat when we get back tomorrow. 😂 We have a ton of snacks, so we won’t starve.

Thanks! That’s actually the one I had marked to try, but I’ve never had much luck making curry that taste like you can get it at a restaurant, lol. Glad to hear this is at least a good start.

Sun: Swordfish with a creamy crab sauce, broccoli and mushrooms Mon: big salad Tue: veggie pasta Wed: not sure but MIL is cooking Thur: roast veg, quinoa and peanut sauce Fri - Sat: no plan yet
Tomato soup with oven grilled cheese. ‘Antipasto pasta’ (I slice up some Italian sausages, after sautéing them, I take them out, deglaze the pan with white wine or chicken stick and throw in whatever we have on hand - usually marinated artichokes, tomatoes, olives, tapenade, pesto, roasted red peppers, whatever, simmer while the Sara cooks, then toss it all together to coat and serve. It’s a family favoritw). Sheet pan roast broccoli and chicken. Tacos, maybe.

Monday - grilled shrimp/pineapple skewers w teriyaki, rice, and broccoli Tuesday - baked chicken in a apricot preserves/Dijon mustard glaze, w roasted asparagus, and smashed potatoes Thursday - post rowing class Chipotle Friday - pizza or sushi Saturday- leftovers or pan seared steak w broccoli and fries
Last night was on your own Tonight was supposed to be pancakes and bacon but ds was up with a stomach bug for part of the night so I'm not sure if pancakes are ok now. Was going to use fresh buttermilk and make them from scratch but maybe it'll be ok if I use a mix and water instead? Tomorrow - hamburger steak and mashed potatoes Wednesday - Cheeseburger pie Thursday - Garlic parmesan chicken and rice Friday - Sunday is always leftovers or on your own

Sunday - beer beef noodles with broccoli Tonight - black bean tacos or eggroll in a bowl Tuesday - trader joe's beef and broccoli with rice Wednesday - whatever we didn't have tonight Thursday - everything sheet pan chicken with asparagus and potatoes Friday - ranch chicken thighs with green beans and mashed potatoes Saturday - ricotta and spinach pizza with salad
Monday - flounder w/ lemon, butter caper (chicken thighs for the boy who won't eat fish), pasta, salad Tues - Mexican Ckn Quesadillas (meat is in freezer from another meal so score), yellow rice, grilled veggies Wed - Mississipi Roast (or might do pickle roast which is the same prep but use pickle juice and pickles instead of pepperocini), potatoes, cauliflower mashed pot, veggies Thur - leftovers or Lasagna (I have in the freezer)
Trying to use what I have in the freezer this week and next week. All the proteins I am able to pull out of the freezer.
