I'm hoping some of you more domestically-inclined types who are good at cooking can help me come up with a side dish!
Saturday is the big Husky/Duck game and H and I will be going over to a friend's place to watch the game. It's going to be a BBQ with lots and LOTS of meat, and knowing our friends the side dishes will also have lots of meat.
I have two problems: 1) I'm a quasi-vegetarian (I eat seafood) so I need to think up a vegetarian dish, so there is something for me to eat. 2) H is the main cook in our family and will be at work on Sat until we leave for the party - so I have to cook it
And H ALWAYS insists on bringing guac (he loves guac, he makes it CONSTANTLY). So my ideal dish would be easy to make, vegetarian, and it would go with guac.
Simple layered dip is always great, you can vary what you like. From bottom to top: refried beans, black beans, cheese. Heat and then top with salsa, shredded lettuce and guac.
