I've never actually made it. Neither did my mom. It kinda weirds me out as a concept, but it does taste damn good. Recently I've been seeing recipes for individually sized loaves or muffin-shaped meat loaves, which somehow seems more palatable.
Zero help - other than Im curious about recipes too.

I would much rather have a piece of meat loaf than meat muffin
2 beaten eggs 3/4 cup of milk 2/3 cup panko bread crumbs 2 tablespoons parsley 1 teaspoon salt 1 teaspoon pepper 1 teaspoon onion powder 1 teaspoon garlic powder 1 1/2 pounds ground beef 1/4 cups ketchup 2 tablespoons brown sugar 1 teaspoon dry mustard 1 tablespoon honey
In a bowl, combine eggs and milk. Add in panko breadcrumbs, parsley, salt, pepper, onion powder, and garlic powder. Add in meat and mix well. Pat into a bread pan (8x4x2 inch).
Bake at 350° for 1 hour to 1 hour 15 minutes (about 160° with a meat thermometer). Spoon off all fat and use a turkey baster to suck out the excess liquid and grease from the bottom and sides of the meatloaf. Combine ketchup, brown sugar, dry mustard, and honey and spread it over the meatloaf. Bake another 10 minutes, then let is stand for 10 minutes before cutting and serving.

Mine is different every time I make it. Ground beef, some tomato sauce, bread crumbs, wheat germ, and whatever I feel like throwing in as far as spices. Usually black pepper, oregano, thyme, sage, garlic, chili pepper. I can't even think properly without being in my spice cabinet.
I make it in a ring shape, like in a bundt pan, because that's the way my mom always did.
Oh yeah, and most of the time I cook it in the microwave. Suck it!

I use campbell's soup recipe (and I use ground turkey) and get lots of compliments. It's frosted with mashed potatoes! It's pretty damn good. If you use ground turkey you'll need to cut the bake time down a little. Like I usually do 52 minutes before I frost and then 7ish minutes after. toottoot.com/r_recipe_campbellsmeatloaf.htm
i had never had meatloaf until recently, and it was brought on by an ML meatloaf discussion. i made the pioneer woman recipe, the one where it's wrapped in bacon. it was good and we had leftovers for days. but i have nothing to compare it too, as a loaf of meat never sounded appetizing before. eta: the cook time was about 45 min. to an hour longer than the recipe states.
I'm a very picky meat eater. I love this one that is linked (I also like it made with beef) and I like Cook's Illustrated version (I've only made it with beef because my po-dunk grocery store doesn't have ground veal, and I've never looked for ground pork).
Glaze: 1/2 cup ketchup 1/4 cup packed brown sugar 4 teaspoons cider vinegar or white vinegar
Meatloaf: (I added some chopped red pepper) 2 teaspoons vegetable oil 1 onion, chopped 2 garlic cloves, minced 1/2 cup whole-milk or plain yogurt 2 large eggs 2 teaspoons dijon mustard 2 teaspoons worcestershire sauce 1 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon dried thyme (I used a pinch) 1/4 teaspoon hot sauce 1 pound ground beef 1/2 pound ground pork 1/2 pound ground veal 2/3 cup crushed saltines (about 16) or 2/3 cup quick oats or 1 1/3 cups fresh bread crumbs 1/3 cup minced fresh parsley 8-12 slices of bacon (I didn't do the bacon)
1. For the glaze: combine all ingredients in a small saucepan; set aside. 2. For the meatloaf: Line 13x9 baking pan with aluminum foil; set aside. Heat oven to 350. Heat oil in 10 inch skillet over medium heat. Add onion and garlic (and I added the red pepper); cook until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients. 3. In large bowl, combine milk, eggs, mustard, worcestershire, salt, pepper, thyme, and hot sauce. Add meat, saltines, parsley and sauteed onion mixture; mix with fork until evenly blended and meat mixture does not stick to bowl. 4. Turn meat mixture onto foil lined pan and shape into a 9x5 loaf. Brush with half of glaze, then arrange bacon slices, crosswise over loaf, overlapping slightly and tucking only bacon tip ends under loaf. 5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Brush rest of sauce over the meatloaf.
I haven't eaten meatloaf since the great Rotovirus episode of 2006 when all 4 of my then fully inact household members came down with it and there was puking and shitting everywhere...and it just so happened that meatloaf was the meal we had the night before.
That said, I freaking love meatloaf and loved my recipe:
For the meatloaf: 2 lbs ground beef 2 1/2 cups crushed Ritz crackers 1 small onion, diced 2 eggs 3/4 c ketchup 1/4 c brown sugar 2 slices of bacon
For the sauce: 1 c ketchup 2 tablespoons vinegar 3/4 teaspoon salt, to taste 2 tablespoons yellow mustard 1/2 cup brown mustard
Preheat oven to 350. Mix ingredients for meatloaf and put loaf in pan. Lay 2 slices of bacon over top. Bake for 1 hour, or until cooked through. Spread sauce over top and bake for another 10-15 minutes.
