Are you serving the food at 3pm? Or later, closer to dinner time? Because that's a ton of food for midafternoon. You have four main dishes! And it's fairly heavy/greasy. Hot dogs, bratwurst, and chili gives me heartburn just reading it. And aren't pigs in blankets mini hot dogs? I wouldn't have a hot dog app and a hot dog entree.
Too many entrees. I would pick two. Maybe the hot dogs and chili. Or grilled chicken and something else (I know a lot of people who will only eat chicken, not red meat or pork.)
I would nix the cream cheese rolls unless they're popular in your crowd. What's in them? (My in-laws always serve cream cheese inside of crescent roll squares and wrapped in bacon and it's a big hit.)
I would offer sodas and/or iced tea in addition to your existing drinks.
Good point about serving regular hot dogs plus pigs in a blanket. If the cream cheese app is popular, then serve that but skip the pigs in a blanket.
I would save the shrimp as a special treat for your DD during a family dinner.
Chili bar with hot dogs and buns for those who want a chili dog sounds like a better and more focused menu. And small dish of chilled shrimp with cocktail sauce is fine. Make it more of an app than a main.
I agree with the others, I would just do the chili and the hot dogs (with buns), nix the brats and pigs in a blanket. You could set it up like a chili bar. Yummy!
They are small rolls. Homemade dough and a little tiny bit of cream cheese in the middle. One of of my MIL specialties. She makes them for almost every event.
I was thinking the same thing on the pigs and the blanket. Maybe I can cut the hot dogs instead so that we can still make them. My MIL is making the dough for these as well.
Good idea on the tea. I can make some sun tea or something.
We are also having cake & ice cream.
I should add that we are BIG over achievers/food cookers for events. So even if it is 3 we most likely will be partying to at least 7. Specially with all the adults.
FWIW, I like pigs in a blanket better than I like hot dogs, I just though people could make chili dogs if they had a hot dog and buns. If you had pigs in a blanket, I'd just dip them in my chili.

I would do a huge batch of chili in a crock pot, toppings on the side buffet-style, and then apps + cake & ice cream. You have way too much food for 3pm, but if you think it will go into the dinner hour then you can serve up the chili (and it will cook/stay warm the entire party without you having to do any work beyond initial prep).

The chili was a last minute add. My brother is making it and he gets really involved with his chili planning. I messaged him and I was like yeah I am thinking chili may be a good addition for DD party as a side dish. We was like "I don't make chili as a side dish" ... Then he asked if I had a crockpot..which I do.
The shrimp is more of appetizer. DH does this dish. I think so far we spent $39 dollars on 4 pounds of shrimp. He is a little crazy about it.

Good point. I don't think we have any vegetarians coming. But the spinach dip will be vegetation. Maybe I should get some tofu hot dogs or something.
