Friends who have been recently say that Revel is awesome (though empty, and bleeding money). They say that it is actually like Vegas. It opened like 2 weeks after I was there last so I didn't get to check it out.
Other than that... um... there's the beach (which I suspect is not a great crowd) and shopping and clubs and pools. And Cape May is nearby.
As far as restaurants go, probably my favorite that I've been to is Bobby Flay Steak, but we avoid AC outposts of NY restaurants so we could be missing out on a lot of good options. The food at Continental was good, but I didn't like the atmosphere -- too sterile and mall-like, which is a shame because the Continental in Old City was one of my favorite hangouts when I lived in Philly.
I was at Revel last month - love it! It's the only non-smoking casino which gets it HUGE points in my book. The other ones make my eyes water because of all the smoke. Yuck.
There's an outlet mall, but the selection and prices aren't very good. The boardwalk is fun and if you go up to Margate or Longport you can walk around and look at some gorgeous beach houses.
As far as restaurants go, on the strip I liked Amada (at Revel) and Buddakan (Ceasars). The Continental (Ceasars) was good as a slightly more affordable option. At the Borgata (further away) Izakaya is amazing and if you go you've got to try the edamame dumplings. Chef Vola's is a local Italian place that is very popular, but you have to get a reservation two to three months ahead of time.

I stayed at the Borgota for a work conference in the spring and Reverl just 2 weeks ago for another conference. Both are nice and have good restaurants, but Revel was practically empty. I think it would have been much better if there were more people out and about and at the bars. But, as a previous poster mentioned, Revel is smoke free, so it won extra points in my book!
As far as restaurants are concerned, at the Borgota I ate at the Old Homestead (both nights actually) and it is quite good. At Revel I ate at Amada one night and Azure another night, both were good, but I enjoyed Azure more.
Outside of that, I have no clue what there is to do down there, beyond the beach, outlets, concerts, and casinos.
I've enjoyed Continental, Buddhakan(both at the Caesars pier), old Homestead (borgata), Dos Caminos (Harrahs). However, all can be found in other cities as well.
When my friends and I go, we usually go to the spa/pool all day, then walk on the boardwalk, get drunk (which I know you can't do) and eat. We sometimes go to a club but honestly I don't care for that scene unless I'm super drunk.
People watching is fun. Lots of, um, interesting things to see.
Also there are shows all the time. I've seen a few at the House of Blues at the Showboat. There is also a convention center on the boardwalk that has shows. Most hotels have shows as well.
Shopping! There are outlets, plus the higher end hotels have stores. And no tax on clothes.
We walked around Revel but didn't eat there. We will stay there next time. They have an indoor/outdoor pool that looks fun.
We usually go with friends if there's a concert or comedy show in town. A few of them like to gamble but we usually just spend $20 on the slots and then find something else to do.
Ditto about Old Homestead, we really enjoyed it. And we usually just walk the boardwalk and look around.

I'm not a huge fan of AC at all but my in laws gamble there so sometimes we will go and meet them.
Chef Vola is definitely awesome. It's literally in the basement of a house in a sketchy neighborhood but its amazingly good. Borgata spa is really nice as well.
