The baby shower post reminded me, my H and I have been invited a pot luck couples baby shower. It sucks because it is in a few weeks on a very busy weekend, and I have no idea what to bring. I don't want to ask the hostess because I'm afraid she'll ask for something complicated/expensive. Since we'd like to give a nice gift to the couple, I don't want to spend a lot of money on the pot luck item.
Help me, I need suggestions for easy and cheap-ish pot luck dish that is appropriate for a shower. Sigh. If we didn't like this couple (old friend of my husband), there's no way I'd go to a pot luck shower. Oh, it is also an hour drive away for us, so I guess the dish can't be hot or perishable. Any suggestions?

I always bring something that I would want to eat - just in case I'm not familiar with the group enough to know their tastes -but also something that has the appearance of effort....
I like doing veggies - but not a ton of them - buy baby carrots and sugar snap peas and then put the dip or hummus in a hollowed out red pepper. looks great & super easy
CostCo has a great broccoli salad in their deli - just mix it up in your own bowl. (my friend does this all the time and everyone asks for her recipe)
a fruit dip is fun too - cream cheese, sour cream, strawberry preserves mixed together and served strawberries and apple slices and cinnamon pita chips
One of the best weddings I ever attended was potluck. It was very "hey, we can't afford a fancy wedding, but we sure can get down and have fun anyway." The couple married at city hall and we headed to their home for the pot luck party.
To OP- I am partial to bringing lentil salads to this kind of thing. They travel well and are substantial enough to fill you up if everything else served is gross.
I like to take caprese salad made with grape tomatoes and the little fresh mozarella balls tossed with fresh basil, olive oil, and sea salt when I need a dish that doesn't need to be kept warm. It takes like five seconds to make but seems one notch more inventive than chips and dip or a veggie platter.
