My BFF just had her baby boy two days ago and I'm going to visit them this weekend. From reading past posts, it seems like the most welcome gift to bring a new mom is some food, so I'm planning on bringing pumpkin muffin as well an entree. However, she is a vegetarian (her husband is not), and all of my favorite go-to meals have meat in them.
Any suggestions or favorite vegetarian meals?
Also, would it be weird to do one large vegetarian dish as well as a smaller dish with meat for her DH?
Here are some of the things I have on my list to make and freeze:
Vegetarian Lasagna
Baked Ziti
Cheese Enchiladas (you could add chicken or beef to half for her DH)
Quiche
Eggplant parmesan
Depending on how much time you want to spend, I make these chicken pot pies without chicken and sub veggie broth for chicken broth (you could put chicken in her DH's). They freeze very well: www.annies-eats.com/2009/11/11/chicken-pot-pie/
