We are still on a tight budget, so we do things like spaghetti, breakfast, tacos, enchiladas, etc. I am not especially creative in the kitchen. This last week, I baked some pork chops on a lower heat for a long time in apple butter and cloves. It was really good!
i ate chicken and broccoli for dinner last night. it was delish. tonight i'll probably have some sort of chicken with green beans or other fresh veggie. i'm trying to eat clean. saturday morning i'm going to make a BIG pot of cauliflower/leak soup so i can eat 'comfort' food until my heart's content and not gain a ton. it tastes like potato soup and is seriously the bomb.. no cream in it either. i use water, seasoning, low sodium/organic/free range chicken stock, leaks, and cauliflower. SOOO GOOD! i might sprinkle a little bacon on top but we'll see... it's delish without it.
Today - pumpkin pancakes Tomorrow - pork stir fry Wednesday - chicken fajitas Thursday - out for HH Friday - Going to attempt a roast duck. Not sure how this will turn out.
I am not sure for this week since it's just M and I with DH working nights still. I have some leftovers from last night, homemade stir fried rice and sweet and sour chicken. Then I think I might make up a batch of creamy avocado enchilada's. They are hard to stop eating though so not sure if thats a good plan for me lol. Then Thursday I think I will eat birthday cake for dinner, thats if I can decide what kind to make.
H is gone tonight and I'm eating out. Tomorrow, it's steaks topped with bleu cheese and some sort of veggie. That's as far as I've gotten this week. I'm also failing at getting dinner on the table lately. I need some new inspiration.

Monday - Golden beet, potato, and greens torta Tuesday - homemade pumpkin ravioli stuffed with blue cheese, ricotta, and mushrooms (DD and I made yesterday!) Wednesday - likely sushi take out with the kids. DH will be in Cannon Beach Thursday - Crab cakes and salad Friday - Steak/salmon on the grill, quinoa and roasted brussels sprouts Saturday - pizza for DD's soccer party

Tonight - French Dips and oven fries Tues - Homemade pizza Wed - Homemade New England Clam Chowder and crunchy bread Thurs - DH is traveling, so leftovers or takeout Fri - something easy! It's packing weekend!
