and it's supposed to be with lemon, but i sliced some grapefruit wedges today (I felt so culinary, you know, using a knife and not slicing myself? triumph!), so i squeezed one in and i am letting one float around.
Boil sugar/water/spring of thyme to make simple syrup. Let cool.
50:50 mix of Passion Fruit rum (I used Don Q, but you can use Passoa if you find it) and grapefruit juice mix with bubbly water (I actually squeezed grapefruits for the juice, i'd say the juice of one grapefruit and the rest of bubbly water?)
add simple syrup to taste (i like my drinks less sweet, but i recognize when you go to a bar, they're sweeter). like 3-4 teaspoons?
i added a sprig of thyme to make it all decorative, but it kept getting on the way, and you can't manipulate thyme like you can rosemary (i do some cocktails with rosemary), so i ended up throwing it away. it wasn't adding any smell or anything, so...
