Nothing really.

I like my raw beef put in scalding soup immediately and not hanging out.

Of course, there is no logic to this.

Do they separate the noodles from the soup, so you can assemble it all at home?

Well, it was only a few minutes. It isn't that far from home. The broth was still hot enough to cook the beef.

I don't like takeout pho for the reason that I don't have a good bowl for it and I end up eating out of a mixing bowl! When DH gets takeout I always stick the broth in the microwave for a little bit to get it super hot again.

Eta it is always disassembled when I get takeout pho and then you put it together at home.

We got takeout this time because I am not feeling well, and pho is the only medicine.

My old place had self-assembly takeout pho as well, but they pre-cooked the beef until it was inedible and gray.

I have two bowls just for takeout pho. Miso, you have no choice but to transfer it, the containers with all the separate ingredients are too small to add all the rest in.
