If it makes the difference between eating veggies and not eating them, go for it. There are ways to do this that are actually very good. Adding pureed roasted red peppers to tomato sauce, for example. And there are dishes that are meant to be pureed, like butternut squash and cucumber soup (those are two separate soups btw, lol). And a lot of root vegetables are good pureed as you would prepare, say, mashed potatoes.
Can you see any particular patterns with the veggies that your system tolerates better than others? For example, do root veggies make you ill but leafy greens not make you sick?
That's probably where I would start. I'm not sure pureeing veggies is going to help, although I suppose it might with some issues.
What about smoothies with spinach or kale mixed in with the fruit. They really do taste good.

sometimes for breakfast I do low fat plain yogurt, whatever fruit I have on hand, a splash of OJ, and lots of spinach. you can also throw in wheat germ or flax seed for extra nutrients.
otherwise, veggies are easy to sneak into pasta sauces. I have never tried it, but maybe you could puree some and mix it with whole wheat bread crumbs to coat chicken strips?

If she's having GI issues, then IME, raw greens are probably not the best way to go. Dark, leafy greens - especially spinach - do a number on me. Right now, I can't eat anything darker than red or green leaf lettuce.
carrots, I think it's a great idea. I really should start doing it since it would be a good way to eat more cooked veggies. Have you been told that cooked veggies may be easier on your system? I have, which sucks since I prefer to snack on raw veggies throughout the day. I can only eat so many cooked vegetables at once.

I think juice would suit you better than purees or smoothies. It's probably the fiber that is upsetting your stomach. I regularly juice vegetables and add a small amount of fruit for flavor. You can easily take in a ton of nutrients this way.
It sounds like you have a start on figuring out what foods/combinations work for you and which don't.
I wonder if you can tolerate the lettuce on the sandwich better because it is paired with bread. A salad might not neccessarily have much in the way of starch eaten with it. Maybe instead of pureeing veggies, you would do better with combining it with other foods - veggies on a sandwich, veggies in a soup with barley/pasta/rice, veggies in a pasta sauce (not neccessarily pureed - I usually chunk/dice mine for the sauce).
Veggies are a good, healthy thing. And it's good you want to get them in. If it takes pureeing them, go for it. If you can figure out alternate options, that works too. Do what works for you, and maybe, over time, see if you can expand the options you have that sit well in your stomach.

It sucks for trying to lose weight though. I've lost a good amount, but I still have another 20 lbs to go.
Juicing is an awesome way to lose weight. I often have a large glass of vegetable/fruit juice in place of breakfast or lunch and it's helped me lose some extra weight. I also feel much more energetic and light (if that makes sense) when I have it.
Let me know if you want me to send you links to some websites with juice recipes or any other information. My mom and dad juice for health reasons (they both have autoimmune disorders that they manage with diet) and they got me started on it a couple years ago.

ETA: I just wanted to add that fiber can easily upset your stomach and sometimes your digestive system needs a break. It makes sense that vegetables are hard to handle if you don't respond well to Fiber One bars.
