A couple of years ago I got a recipe from someone on The Nest, can't remember if it was MM or my local, but I'm hoping someone here can help me out.

It was a cheesy chicken tortilla soup recipe.
I remember a few pieces, but no measurements, and I'm sure I'm missing some.
Rotisserie chicken, shredded or cut into small pieces Velveeta Ro-tel or similar tomato/pepper mixture Maybe some chicken broth? Used soft corn tortillas cut into strips almost like "noodles"
Does this sound familiar to anyone? Or have a similar recipe I can steal? The appeal to this one was that it was EASY. Just dump together, stir and simmer, no chopping vegetables.
I make this crockpot one with rotisserie chicken. It is very easy and tasty. There is no cheese, though. IMO tortilla soup should be topped with cheese (cheddar or jack, not parm as this woman suggests), not cooked with velveeta in it.
Our nanny just made one that had half and half added to it and it was so good! I don't know what recipe she used but it was delicious if you want to try a cream based tortilla soup.
Not that recipe, by my cheater recipe is 1 can chicken and rice soup, 1 cup chunky salsa, 1 cup cheese (half while heating, half at end), 1 can chicken (or can add rotiessiere meat, whatever).
And I'm not normally a big Velveeta fan, either, but I threw this soup together for a small autumn gathering a couple years ago, and my H has been asking for it again ever since.
I would just saute some veggies (onion, celery, carrot), make a roux that has chili powder and cumin in it, and add stock/broth and diced tomatoes (maybe some roasted red peppers) and cooked chicken for a nice rich soup. Top with tortilla strips and cheese. That's essentially what I did with black beans instead of chicken, and it's easy and delicious.
I always make tortilla soup the same way everyone else seems to make it in this thread, chicken, chicken stock, veggies, etc.
But I admit that Velveeta is one of those foods that I think is awesome in moderation. I never had it as a kid, because when your mom makes you live on crunchy granola organic foods your whole childhood and your idea of a snack is picking apples and berries out of your yard, things like Velveeta become very mysterious and magical. That copycat recipe looks YUMMY!
I know, I know with the Velveeta...I'm sorry, y'all. I promise my normal food choices are slightly more highbrow.
And AH? With the roux? Who do you think I am? I can barely make toast. Enough with the fancy cooking terms. "Make a roux..." I'm chuckling here Shit, I had to Google that just to find out what it was!*

Ok seriously I just saw that the velveeta recipe uses flour tortillas! You all are seriously hurting my cooking soul.
ETA: Again, I think you need the corn because the corn adds the flavor to the broth that makes it tortilla soup. Without it you just kind of have spicy soup with tortillas on top.
Chop veggies. Put oil in large pot. Saute veggies. Be sure to season with salt and pepper. You might then need to add a bit more oil. Mix together about 1/4 cup flour with the spices. Put it in the pot. Make a paste. Slowly add the stock or broth. Stir continuously.
You can also skip the roux and just do broth, but the roux makes it richer.

I've seen something similar that's a casserole.
Big block of velveeta, slice off about 6 thin slices & reserve 1 can cream of mushroom 1 can cream of chicken 2 cans rotel tomatoes Whole shredded chicken Bag of tortilla chips
Mix everything together in a big pot except the chips. Slightly crumble chips enough chips to cover the bottom of 9x13 baking dish. Pour 1/2 of cheese mixture on top of chips. Crumble chips in another layer, pour reminder of cheese mix & cover with whole tortilla chips. Place a few slices of velveeta on top & Bake at 350 for 20-30 minutes, will be very bubbly & cheese on top will be melted. Let cool about 10 minutes before serving.
I make Chicken tortilla soup all the time, it's super easy :
2 cans tomatoes 1 cup chicken stock 1 onion chopped 1 can black beans rinsed 1 can sweet corn drained 1-3 tablespoon taco seasoning (taste to your preference) 1 small can diced green chilis 2 chicken breast - boneless
1) Saute chopped onion in a little butter till tender. 2) Add everything else but chicken and stir. Bring to a low boil and then add 2RAW pieces of chicken -- cook for 10 minutes 3) Remove chicken (won't be fully cooked) and shredded with 2 forks then put shredded chicken back in soup pot and simmer for another 10 minutes
Super yummy and chicken is super moist and tender!
Then I add tortilla chips, grated cheese, sour cream, whatever on top -- super yum!!
