I was fitted for new bras a couple weeks ago and the bra I purchased is really tight. I know it's supposed to be snug, but I think it gives me back rolls. I went to a really high end shop that is known for it's fittings, and I don't doubt that a size up is probably too big. But how long will it take for this thing to stretch? It's uncomfortable and I look gross.

I'm curious to see what your responses are here. I personally refuse to wear something that tight. I would rather be a little less perky and more comfortable. To me, there is nothing worse than a too tight band. I'm a 32 F, but wear the 34 E.
Have you played with the straps and clasps in the back? If you've played around with the settings (weird word choice) and it's still feeling snug I'd take it back.
You might need to go from a 32 to 34 or a A to a B. Bra sizing is really weird.
ETA - I have really really small non-exist boobs so a tight bra works for me. It could also be the style of the bra. The size is right but the style just doesn't work for you for whatever reason.
I would wear it two or three days in a row to break it in. Wearing it once and then not again for a few days will let the elastic re-tighten (which is really the best practice but not going to help you here).
After that if it is still too tight then I'd take it back. If the next size is too big then try a different brand. They all fit different.
I would go back to the store and ask for an exchange. I wear bras in a band one size larger than what I've been fitted for because they're not comfortable otherwise.

They should be tight, like uncomfortably tight, in the beginning. Adjust the straps so that the band is lower on your back as well. That often helps with the back fat issue.
For your reference, if it fits correctly, you should be able to have the band hooked, with the straps off and your boobs held up like 80% of the way, if not more. The band is what should hold you up, not the straps, which us why it needs to be tight.
How long have you been wearing it? I was fitted for a 30 but ended up getting a 32. It did end up stretching a lot but that has been about 6ish weeks ago.

I did the same things recently and tried on at least fifty bras--I was there for almost 3 hours. I never found the perfect bra. :-(
I found that if the cups fit, the band didn't or vice versa. I ended up getting one where the cups fit and buying a bra extender. Its not perfect, but it will work until I can find the right bra.
How much did these cost ijack? Because if they were cheaper than go ahead and exchange but know that you should replace them sooner. I pay a lot for my bras so I get them as tight as I can stand so that they last as long as they should.
Take them back. At that price I would hope they would be the most comfortable bra you own. Did you try on different styles? Sometimes its not the size but the way the style is cut.
