This post has inspired me...today, I will be making Apple Coffee Cake with 'crumble' topping and a brown sugar glaze....nom nom nom.

I'm pretty impressed with myself that my pie looks all neat and nice. Most of the time anytime I make pie, half of the liquid ends up on the oven floor.

That's it, I'm tell DH we need to buy our new stove now--not next month. I need to get back to baking more and it's hard to do that when one of the heating elements is broken.
1 stick of butter (diced and put back in fridge or freezer for 10 to 20 minutes) 1 1/4 cups flour 1/4 teaspoon salt 1/4 cup very cold water
Mix flour and salt together; cut in butter (I leave mine pretty lumpy honestly; I think it makes it flakier). Add water tablespoon by tablespoon until it comes together. You don't want it watery.
Wrap in plastic wrap; flatten into a disc shape, put back in fridge for 30 minutes to over night depending on when you make the pie.
***My pie plate is 9.5 inches. I 4x my dough recipe. I then cut my dough in half and pressed half into the pie plate. And rolled out the other half (with a soup can because I don't own a rolling pin lol!) and cut into strips. ]Keep your dough cold. Put pie plate back into fridge while you cut your apples.
Apple pie filling;
4 to 6 apples; I used 5 large apples and had too many. Dice them or slice them; peel them. (I didn't peel mine, please peel the apples)
Coat your apples with a little lemon juice to keep from browning and then coat with 2 or 3 tablespoons of flour.
In a sauce pan over medium heat bring to a boil;
6 tablespoons of butter 1/2 cup of white sugar 1/2 cup of brown sugar 1/4 teaspoon cinnamon
Once brought to a boil, remove from heat.
Get your pie plate and pour your apples in. Weave your dough on top for the lattice work; roll in your edges to make it all pretty.
Spoon your syrup over all the lattice work dough and into your pie.
Bake at 425 for 15 minutes then 350 for 35 to 40 minutes.
