What are your go to snacks for LO? I'm struggling with finding him snacks that are nutritious and quick.
Also, if DS is taking a sippy just fine at almost 11 months, is there any reason I should continue giving him a bottle? He hasn't learned how to use a straw yet, but the other sippy cups he does just fine with tipping/drinking and not choking due to the faster flow.
At that age, our snacks were really just regular food, but in smaller amounts. Fruit, cheese, yogurt, etc. At that age DS was still eating purees, too (he had some texture issues), so a jar of veggies counted as a snack - if your DS is past that point, then basically whatever he will eat. We did puffs and yogurt drops a lot when we were on the go.
And if he will drink out of a sippy, there really is no need for a bottle. Since he is still under a year, I would just make sure he is getting enough to drink if he is getting milk/formula that way.
My DD is older then your LO, but my snack bag always has applesauce pouches, Stretch Island Fruit Co fruit strips, Motts for Tots fruit snacks (they are a little softer) and the individual packs of Annie's Bunnies. When we are home, snacks are fruit (DD loves berries of all kinds, so that's a frequent one), string cheese, apples & peanut butter, cucumber slices & ranch, yogurt, veggie straws, sugar snap peas, stuff like that.
I think if DS is fine with a sippy, then dropping the bottle is fine. DD was done with bottles by a year, though she only knew how to use the straw sippies (didn't figure out regular ones for a looooong time).

My kids eat a lot of cheese, yogurt, apple slices, ants on a log (celery w/ peanut butter and raisins), individual cups of applesauce, grapes, cut up bananas, pretzels, crackers, Annie's organic graham cracker bunnies, smoothies, carrot sticks w/ hummus, fruit bark, fruit/veggie squeeze pouches, and granola bars. Obviously, some of those foods might still be difficult for your 11 month old to eat depending on how he does with finger foods but at least they'll give you some ideas going forward.
Also, there really isn't a need for a bottle if your LO can drink from a sippy. I'd probably still hang on to a few though. I've found that when DD2 is cutting a tooth, she sometimes prefers a bottle to her sippy for some reason. It must be that the hard spout of the cup irritates her gums more or something.

When we're home, DD will just have a small meal or yogurt or fruit. But healthy snacks that you can keep in your purse/diaper bag are hard to come up with, I think.
We usually just stick with granola bars now (I buy DD the Kashi ones that come two to a pack, so they're hard and crumbly instead of sticky). We sometimes carry dry cereal, goldfish, triscuits, applesauce pouches, or an insulated sippy of kefir (a drinkable yogurt). If I know we'll be out for a while, I'll carry an insulated bag with a freezer pack and cheesesticks.

When my kids were that age, their snacks were pretty much the same as they are now (they're 6 and 9), just in smaller pieces/portions. They ate a lot of Cheerios, crackers, cheese, applesauce, Goldfish, yogurt, fruit (apples, grapes, melon and bananas mostly), raisins.
The minute they got the hang of a sippy cup, the bottles were gone. I started with a 50/50 mix of formula and milk in the sippy and moved toward 100% milk (that took all of two days with #1, she loved milk...#2 needed a few weeks to make the transition).
