I still don't know how many are coming. I aam remarkably Zen about it though. S Her are my thought though: What can I make for breakfast that morning that doesn't require a ton of dishes or the oven?
My appetizer ideas are veggies and dip, cheese and crackers and chips and dip. Anything fun I can add in there?
Best stuffing recipe ever? I am rethinking our typical sausage stuffing, because I don't want to buy sausage.
One last thing. Desserts. I am making pie and chocolate cake, but need one more. Great ideas?

Store-bought doughunts!
For appetizers, I'd add some nuts (like Planters mixed nuts or whatever) and/or olives, both for variety and in case anyone's totally starving. But you'd also be totally fine with what you have.
My favorite stuffing recipes are chorizo-cornbread and sourdough-artichoke, both findable googling with Sunset magazine. I also like a more traditional cornbread stuffing that's a mixture of cornbread, white bread, and saltines, but this is a bit bland for some of the tastes in our house these days.
For the additional dessert, why not add another pie that's a different sort from whatever other pie you're doing? I like to mix one fruit pie like apple with another like sweet potato, pumpkin, or pecan. I make a triple-chocolate pecan pie that actually cuts down on the sweetness of just pecan pie because of the added chocolate.

For apps you could do cheese blintzes. They're relatively quick and easy, but do require 10 minutes of oven time. This recipe is pretty close the what my family makes allrecipes.com/recipe/cheese-blintzes/. We don't serve with sour cream and you need to buy the crappiest sunbeam-like bread you can find (the easier you can squish and destroy the loaf the better) otherwise it's the same.
ITA Fuss on dessert. I would do a fruit pie (apple really is the superior fruit pie choice here) and a pumpkin/squash/pecan type pie. This is the Apple pie I'm making. It's different, but delicious allrecipes.com/recipe/apple-pie-by-grandma-ople/detail.aspx
If you were okay with using the oven just a little, you could do a french toast casserole, since that can be made in advance and just popped in the oven the morning of. Or just cereal or pre-made muffins.
Apple pie and pumpkin pie are our staples. The stuffing my mother makes is her own recipe. It includes genoa salami, sopressatta, pepper ham or prosciutini, and a combo of hot & sweet italian sausage. Not helpful for not buying sausage, but maybe you could tweak your recipe with other meats?
