I think if people line up for separate check-out areas, there's no line jumping. At our store people tend to just make one big line and go to whichever check-out thing is open first.

This. All the stores I go to with self-checkout, everyone lines up in one single line and whoever is first in line goes to the open register.
I think I've only ever seen a line for self checkout once.
There is an awkward amount of space between our self checkouts. I've always thought it was to indicate that if there was a line, each checkout should have its own line.
But I line jump. I just make sure I don't cut in front of anyone, and anyone in front of me "gets dibs" as it were. I don't think it's rude to decide a lane is just moving too slowly and go somewhere else. I gots things to do!!

In my stores each checkout gets it's own line. No way would I jump into another line just b/c I was waiting longer. Even in the ones that dont have specific 100% defined lanes, no way.
